| dc.description.abstract | Cabai rawit (Capsicum frutescens L.) merupakan komoditas hortikultura yang mudah rusak akibat tingginya laju respirasi dan infeksi mikroba pascapanen. Penelitian ini bertujuan mengkaji pengaruh variasi konsentrasi carboxymethyl cellulose (CMC) pada edible coating dengan bahan aktif jahe merah terhadap mutu cabai rawit selama penyimpanan suhu ruang. Rancangan percobaan menggunakan perlakuan variasi CMC 0,1%, 0,5%, 1%, dan tanpa pelapis sebagai kontrol, yang disimpan pada suhu ruang selama 9 hari. Parameter pengamatan meliputi susut bobot, total padatan terlarut, warna, kekerasan, laju respirasi, dan cemaran mikroba. Hasil penelitian menunjukkan bahwa aplikasi edible coating secara signifikan mampu mempertahankan mutu fisik dan kimia cabai. Berdasarkan metode Indeks Efektivitas De Garmo, formulasi CMC 0,5% merupakan perlakuan terbaik yang efektif menekan laju respirasi, meminimalkan susut bobot, mempertahankan tingkat kekerasan dan Total Padatan Terlarut, serta mereduksi populasi mikroba pembusuk melalui aktivitas senyawa antibakteri dari ekstrak jahe merah. Sebaliknya, aplikasi CMC 1% mengondisikan lapisan membran yang terlalu tebal sehingga memblokir sirkulasi oksigen anoksia, respirasi anaerobik, dan menyebabkan pelunakan jaringan. Kesimpulannya, taraf CMC 0,5% dengan penambahan ekstrak jahe merah pada edible coating sangat direkomendasikan untuk mempertahankan mutu dan memperpanjang umur simpan cabai rawit. | |
| dc.description.abstract | Bird’s eye chili (Capsicum frutescens L.) is a highly perishable horticultural commodity due to its rapid respiration rate and postharvest microbial infections. This study aimed to evaluate the effect of varying carboxymethyl cellulose (CMC) concentrations in corn starch-based edible coatings enriched with red ginger extract on the quality of bird’s eye chili during ambient storage. The experimental design used 0,1% CMC, 0,5% CMC, 1% CMC, and an uncoated control, stored at room temperature for 9 days. The observed parameters included weight loss, total soluble solids, color, firmness, respiration rate, and microbial contamination. The results showed that the edible coating application significantly maintained the physical and chemical quality of the chillis. Based on De Garmo’s effectiveness index method, formulations with 0,5% CMC was the best treatment, effectively suppressing the respiration rate, minimizing weight loss, maintaining firmness and Total Soluble Solid, and reducing the spoilage microbial population through the antibacterial activity of the red ginger extract. Conversely, 1% CMC formulation created an overly thick membrane barrier that blocked oxygen circulation, triggering anaerobic respiration, and tissue softening. In conclusion, the 0.5% CMC concentration with the addition of red ginger extract into the edible coating formulation is highly recommended to maintain the quality and extend the shelf life of bird's eye chili. | |
