Lansia memiliki risiko konstipasi akibat rendahnya konsumsi serat. Wedang ronde
merupakan salah satu minuman tradisional berbahan rempah yang digemari lansia
sehingga berpotensi dikembangkan sebagai minuman tinggi serat. Penelitian ini
bertujuan mengembangkan wedang ronde dengan substitusi tepung talas beneng dan
bekatul sebagai sumber serat. Penelitian menggunakan desain eksperimental dengan
Rancangan Acak Lengkap (RAL) pada tiga formulasi perbandingan tepung ketan,
tepung talas beneng, dan bekatul, yaitu F1 (85%:10%:5%), F2 (70%:25%:5%), dan
F3 (50%:45%:5%). Uji organoleptik dilakukan terhadap 35 panelis semi terlatih
meliputi uji hedonik dan mutu hedonik. Data dianalisis menggunakan uji Kruskal
Wallis dan dilanjutkan dengan uji Mann-Whitney. Hasil penelitian menunjukkan
bahwa formulasi terbaik adalah F2. Satu sajian 170 g, formulasi tersebut
mengandung energi sebesar 98 kkal, lemak 1,8 g, protein 1,4 g, karbohidrat 19 g, dan
serat pangan 5,64 g. Satu sajian wedang ronde (170 g) memiliki kandungan serat
produk mencapai 5,28 g per 100 kkal sehingga dapat dikategorikan sebagai minuman
tinggi serat.

| dc.description.abstract | Development of Wedang Ronde Made from Beneng Taro Flour and
Rice Bran as a High-Fiber Beverage for the Elderly.
Eldery are at risk of constipation due to inadequate dietary fiber intake. Wedang
ronde, a traditional Indonesian spiced beverage that is popular among older adults,
has the potential to be developed as a high-fiber beverage. This study aimed to
develop wedang ronde by substituting glutinous rice flour with Beneng taro flour and
rice bran as sources of dietary fiber.This study employed an experimental design
using a Completely Randomized Design (CRD) with three formulations of glutinous
rice flour, Beneng taro flour, and rice bran: F1 (85%:10%:5%), F2 (70%:25%:5%),
and F3 (50%:45%:5%). Organoleptic evaluation was conducted with 35 semi-trained
panelists using hedonic and hedonic quality tests. The data were analyzed using the
Kruskal–Wallis test followed by the Mann–Whitney test. The results showed that F2
was the best formulation. One serving (170 g) contained 98 kcal of energy, 1.8 g of
fat, 1.4 g of protein, 19 g of carbohydrates, and 5.64 g of dietary fiber. With a fiber
content of 5.28 g per 100 kcal, one serving (170 g) of wedang ronde can be classified
as a high-fiber beverage. | |
