      Kajian Teknologi Air Blast Freezer untuk Mempertahankan Mutu Pisang Kepok Goreng Beku

      Abstract
      Pisang kepok goreng beku merupakan salah satu produk pangan siap olah yang berpotensi meningkatkan nilai tambah komoditas pisang. Mutu produk dipengaruhi oleh metode pembekuan dan metode penyajian yang diterapkan selama proses pengolahan. Penelitian ini bertujuan menganalisis pengaruh metode pembekuan dan metode penyajian terhadap mutu fisik dan sensori pisang kepok goreng beku serta menentukan kombinasi perlakuan terbaik. Bahan yang digunakan adalah pisang kepok dengan kematangan ±90% (green mature) yang diperoleh dari petani di Kabupaten Bogor, tepung dan minyak goreng sawit. Pisang disortasi, dikupas kulitnya dan dibelah menjadi empat bagian (ketebalan ±0,5 cm), dilapisi adonan, digoreng (pre-frying), dikemas, dibekukan dan disimpan beku pada suhu -18°C. Penyajian dilakukan setelah dilakukan thawing pada suhu ±27°C selama 30 menit dan kemudian digoreng dengan metode deep frying dan air frying. Parameter yang diamati meliputi laju pembekuan, thawing loss, daya serap minyak, kekerasan, warna (chroma, hue, dan ?E), serta mutu sensori. Penelitian menggunakan rancangan acak lengkap faktorial dengan dua faktor yaitu metode pembekuan (air blast freezer (ABF) dan chest freezer) dan metode penyajian (deep frying dan air frying). Hasil penelitian menunjukkan bahwa suhu pusat bahan dengan pembekuan ABF mencapai -18°C dalam 62 menit dengan laju pembekuan 0,24°C/menit, sedangkan dengan chest freezer memerlukan 615 menit dengan laju 0,03°C/menit. Metode pembekuan berpengaruh nyata terhadap thawing loss dan nilai chroma (p<0,05), sedangkan metode penyajian tidak berpengaruh nyata terhadap sebagian besar parameter. Interaksi kedua faktor berpengaruh nyata terhadap atribut aroma dan penerimaan keseluruhan (p<0,05) pada hasil uji organoleptik. Seluruh perlakuan berada pada kategori penerimaan netral hingga suka. Berdasarkan keseluruhan mutu fisik dan sensori, kombinasi pembekuan menggunakan ABF dan penyajian dengan air frying direkomendasikan sebagai perlakuan terbaik.
       
      Frozen plantain fritters are a ready-to-cook food product with the potential to increase the added value of banana commodities. Product quality is influenced by the freezing method and serving method applied during processing. This study aimed to analyze the effects of freezing method and serving method on the physical and sensory quality of frozen plantain fritters and to determine the best treatment combination. The materials used were kepok bananas with a ripeness level of ±90% (green mature), obtained from farmers in Bogor Regency, along with flour and palm cooking oil. The bananas were sorted, peeled, and cut into four pieces (thickness of ±0.5 cm), coated with batter, pre-fried, packaged, frozen, and stored under frozen conditions at -18°C. Serving was carried out after thawing at ±27°C for 30 minutes, followed by frying using either the deep frying or air frying method. The parameters observed included freezing rate, thawing loss, oil absorption, hardness, color (chroma, hue, and ?E), and sensory quality. The study used a completely randomized factorial design with two factors: freezing method (air blast freezer (ABF) and chest freezer) and serving method (deep frying and air frying). The results showed that the core temperature of the material with ABF freezing reached -18°C within 62 minutes, with a freezing rate of 0.24°C/minute, whereas the chest freezer required 615 minutes, with a freezing rate of 0.03°C/minute. The freezing method significantly affected thawing loss and chroma value (p < 0.05), while the serving method had no significant effect on most parameters. The interaction between the two factors significantly affected the aroma attribute and overall acceptance (p < 0.05) in the organoleptic test results. All treatments fell within the neutral-to-like acceptance category. Based on overall physical and sensory quality, the combination of ABF freezing and air-frying serving is recommended as the best treatment.
