      PENGEMBANGAN MINUMAN SERBUK INSTAN TINGGI SERAT BERBASIS OKRA (Abelmoschus esculentus (L.) Moench) DAN OATS (Avena Sativa)

      Abstract
      Rendahnya asupan serat pada masyarakat yang dapat meningkatkan risiko berbagai penyakit degeneratif. Salah satu upaya yang dapat dilakukan adalah pengembangan bahan pangan fungsional berupa minuman serbuk berbahan okra dan oats yang kaya serat pangan. Penelitian ini bertujuan membuat minuman serbuk instan dari bahan pangan fungsional tinggi serat yang dapat disukai. Penelitian ini dilaksanakan pada bulan Januari hingga Mei 2026. Formulasi okra dan oats pada penelitian ini yaitu F1 (70:30), F2 (60:40), F3 (50:50). Hasil penelitian menunjukkan bahwa formula F3 menjadi formula terpilih melalui metode Weighted Sum Model (WSM). Kontribusi kandungan serat berdasarkan acuan label gizi (ALG) umum yaitu sebesar 20%, sehingga menjadikan produk minuman instan okra dan oats dapat diklaim sebagai tinggi serat.
       
      Low dietary fiber intake among the population may increase the risk of various degenerative diseases. One effort to address this issue is the development of functional food products, such as instant powdered beverages made from fiber-rich ingredients including okra and oats. This study aimed to develop a high-fiber functional instant powdered beverage that is acceptable to consumers. The research was conducted from January to May 2026. Three formulations with different proportions of okra and oats were evaluated: F1 (70:30), F2 (60:40), and F3 (50:50). The results showed that formulation F3 was selected as the best formulation based on the Weighted Sum Model (WSM) method. The dietary fiber content of the selected formulation provided 20% of the Daily Reference Intake (DRI), based on the Indonesian Nutrition Facts Label guidelines, allowing the product to be classified as a high-fiber beverage. Therefore, the developed instant powdered beverage based on okra and oats has the potential to serve as a functional food product that supports adequate dietary fiber intake.
