      Abstract
      Kemangi (Ocimum basilicum L.) merupakan sayuran siap konsumsi yang umum dikonsumsi mentah sehingga rentan mengalami cemaran mikrobiologis dan penurunan mutu pascapanen. Pencucian air biasa kurang efektif, sedangkan sanitizer klorin berisiko menghasilkan disinfection by-products dan residu kimia sehingga diperlukan alternatif sanitasi yang aman. Penelitian ini bertujuan menganalisis pengaruh konsentrasi ozon (1, 2 ppm) dan lama perendaman (1, 2 menit) menggunakan teknologi plasma fine bubble terhadap penurunan cemaran mikrobiologis berdasarkan Total Plate Count (TPC) dan perubahan mutu kemangi, serta menentukan kombinasi perlakuan terbaik. Penelitian menggunakan Rancangan Acak Lengkap faktorial 3×2 (ozon 0, 1, 2 ppm; perendaman 1, 2 menit) dengan dua ulangan. Susut bobot, warna, dan total padatan terlarut dianalisis dengan Two-Way ANOVA dilanjutkan uji Duncan jika berbeda nyata. TPC dianalisis pada kombinasi ozon 2×2 dengan kontrol sebagai pembanding deskriptif. Enam atribut organoleptik dievaluasi oleh 25 panelis dan dianalisis dengan uji Friedman karena bersifat ordinal. Nilai TPC seluruh perlakuan berkisar 4,17–4,85 log CFU/g, tergolong kategori “dapat diterima” menurut pedoman PHLS tanpa perbedaan nyata antarperlakuan (p > 0,05). Kombinasi ozon 1 ppm dan lama perendaman 2 menit (A1B2) menunjukkan kecenderungan terbaik dengan nilai rerata TPC terendah, mempertahankan mutu fisikokimia, dan menghasilkan skor organoleptik tertinggi pada sebagian besar atribut dan hari pengamatan.
       
      Basil (Ocimum basilicum L.) is a ready-to-eat vegetable commonly consumed raw, susceptible to microbiological contamination and postharvest quality loss. Conventional water washing is less effective, while chlorine sanitizers risk forming disinfection by-products and chemical residues, requiring a safer alternative. This study analyzed the effects of ozone concentration (1, 2 ppm) and immersion duration (1, 2 min) using plasma fine bubble technology on microbial reduction (TPC) and quality changes, and identified the best combination. A 3×2 Completely Randomized factorial design (ozone 0, 1, 2 ppm; immersion 1, 2 min) with two replications was used. Weight loss, color, and total soluble solids were analyzed by Two-Way ANOVA with Duncan's test when significant. TPC was analyzed on the 2×2 ozone combinations with control as baseline. Six organoleptic attributes were evaluated by 25 panelists using the Friedman test for their ordinal nature. TPC values ranged 4.17–4.85 log CFU/g, classified acceptable per PHLS guidelines, with no significant differences among treatments (p > 0.05). The combination of 1 ppm ozone and 2 minutes immersion (A1B2) showed the best tendency with the lowest average TPC value, maintained physicochemical quality, and produced the highest organoleptic scores for most attributes and observation days.
