Perlakuan Teknologi Plasma Fine Bubble (PFB) untuk Menurunkan Residu Pestisida Brokoli (Brassica oleracea var.italica)
Abstract
Brokoli (Brassica oleracea var. italica) merupakan komoditas hortikultura yang berpotensi mengandung residu pestisida akibat penggunaan pestisida selama budidaya. Struktur kuntumnya yang rapat menyebabkan pencucian konvensional kurang efektif menghilangkan residu pestisida sehingga diperlukan teknologi pencucian pascapanen yang lebih efektif. Penelitian ini bertujuan mengidentifikasi indikasi penurunan residu pestisida golongan organofosfat menggunakan teknologi Plasma Fine Bubble (PFB) serta mengevaluasi pengaruhnya terhadap mutu brokoli selama penyimpanan. Penelitian menggunakan Rancangan Acak Lengkap (RAL) faktorial 2 × 2 dengan dua ulangan, yang terdiri atas dua konsentrasi ozon terlarut (2 ppm dan 4 ppm) serta dua lama perendaman (5 menit dan 10 menit), dengan kontrol tanpa perlakuan PFB. Residu pestisida dianalisis secara kualitatif menggunakan test kit pestisida untuk mendeteksi residu pestisida golongan organofosfat, sedangkan mutu brokoli dievaluasi berdasarkan Total Plate Count (TPC), susut bobot, warna, kekerasan, dan total padatan terlarut selama penyimpanan pada suhu ruang. Hasil penelitian menunjukkan bahwa perlakuan PFB dengan ozon terlarut 4 ppm selama 10 menit memberikan hasil paling baik berdasarkan indikasi penurunan residu pestisida yang ditunjukkan oleh perubahan warna larutan menjadi lebih bening serta menghasilkan jumlah mikroorganisme sebesar 4,6 log CFU/g. Perlakuan tersebut juga mampu mempertahankan mutu brokoli melalui susut bobot yang lebih rendah, perubahan warna yang lebih lambat, kekerasan yang lebih tinggi, dan total padatan terlarut yang lebih stabil dibandingkan kontrol. Teknologi Plasma Fine Bubble berpotensi menjadi metode pencucian pascapanen yang ramah lingkungan untuk meningkatkan keamanan pangan dan mempertahankan mutu brokoli. Broccoli (Brassica oleracea var. italica) is a horticultural commodity that may contain pesticide residues due to pesticide application during cultivation. Its compact floret structure makes conventional washing less effective in removing pesticide residues, highlighting the need for a more effective postharvest washing technology. This study aimed to identify indications of organophosphate pesticide residue reduction using Plasma Fine Bubble (PFB) technology and to evaluate its effects on broccoli quality during storage. The study employed a 2 × 2 factorial Completely Randomized Design (CRD) with two replications, consisting of two dissolved ozone concentrations (2 and 4 ppm) and two immersion times (5 and 10 min), with untreated samples serving as the control. Pesticide residues were qualitatively analyzed using a pesticide test kit to detect organophosphate pesticide residues, while broccoli quality was evaluated based on Total Plate Count (TPC), weight loss, color, firmness, and total soluble solids during storage at room temperature. The results showed that the PFB treatment with 4 ppm dissolved ozone for 10 min exhibited the best performance, as indicated by a clearer color of the test solution, suggesting a reduction in pesticide residues, and a microbial count of 4.6 log CFU/g. The treatment also maintained broccoli quality by reducing weight loss, delaying color changes, preserving firmness, and maintaining more stable total soluble solids compared with the control. These findings indicate that Plasma Fine Bubble technology has the potential to serve as an environmentally friendly postharvest washing method for improving food safety and maintaining broccoli quality.
