dc.description.abstractPerkembangan industri minuman di Indonesia mendorong modifikasi produk milk tea berbahan dasar herbal dan susu nabati sebagai minuman rendah gula, rendah lemak, dan mengandung antioksidan. Penelitian ini bertujuan mengembangkan oat milk tea dari bunga rosella dan bunga telang dengan tiga formulasi perbandingan rosella dan telang yaitu F1 (3g:1g), F2 (2g:2g), dan F3 (1g:3g) menggunakan Rancangan Acak Lengkap (RAL), uji hedonik dan mutu hedonik dengan 35 panelis semi terlatih, serta penentuan formula terpilih menggunakan Weight Sum Method (WSM). F3 terpilih sebagai formula terbaik pada seluruh parameter organoleptik dengan kandungan energi 61 kkal, protein 1,8 g, lemak 1,5 g, karbohidrat 11 g, gula total 0,61% per 100 gram, dan aktivitas antioksidan IC50 59.893,23 mg/L. Produk memenuhi standar mutu SNI 01-3830-1995 dan klaim rendah gula serta rendah lemak berdasarkan Peraturan Kepala BPOM Nomor 1 Tahun 2022, dengan kontribusi AKG dewasa awal sebesar 3,5–4,5% dan harga jual Rp 8.000 per 150 ml. Oleh karena itu, produk ini dapat menjadi alternatif minuman yang rendah gula, rendah lemak, dan mengandung antioksidan.
dc.description.abstractThe development of the beverage industry in Indonesia has encouraged the modification of milk tea products based on herbal ingredients and plant-based milk into a beverage that is low sugar, low fat, and contains antioxidants. This study aimed to develop oat milk tea based on rosella and butterfly pea flower with three formulations F1 (3g:1g), F2 (2g:2g), and F3 (1g:3g) using a Completely Randomized Design, hedonic and hedonic quality tests involving 35 panelists, and the Weight Sum Method (WSM) for best formula selection. F3 was selected as the best formula across all organoleptic parameters with energy 61 kcal, protein 1.8 g, fat 1.5 g, carbohydrate 11 g, total sugar 0.61% per 100 grams, and antioxidant activity IC50 of 59,893.23 mg/L. The product met SNI 01-3830-1995 quality standards and the low sugar claim criteria based on BPOM Regulation Number 1 of 2022, with nutritional contribution to young adult RDA of 3.5–4.5% and a selling price of Rp8.000 per 150 ml. Therefore, this product can be an alternative beverage that is low sugar, low fat, and contains antioxidants.
