      Abstract
      ASILAH DZAKIYYAH, Pengembangan Produk Biscotti Berbasis Tepung Umbi Garut dan Tepung Kedelai Sebagai Alternatif Camilan Tinggi Serat. Dibimbing oleh ANI NURAENI. Konsumsi serat masyarakat indonesia tergolong rendah. Sumber serat umumnya berasal dari buah dan sayur, namun konsumsi nya masih belum mencukupi sehingga diperlukan alternatif sumber serat yang praktis. Salah satu upaya yang dapat dilakukan yaitu pengembangan camilan berbahan umbi garut yang diketahui mengandung serat tinggi. Penelitian ini bertujuan untuk mengembangkan produk biscotti berbasis tepung umbi garut dan tepung kedelai. Metode yang digunakan yaitu desain eksperimental dengan Rancangan Acak Lengkap (RAL). Penelitian ini menggunakan tiga formulasi dengan perbandingan tepung umbi garut dan tepung kedelai yang berbeda, yaitu F1 (90%:10%) F2 (85%:15%) F3 (80%:20%). Analisis produk meliputi uji organoleptik, uji proksimat, uji serat pangan, uji daya simpan serta kontribusi zat gizi terhadap Angka Kecukupan Gizi (AKG) dan Acuan Label Gizi (ALG). Pengujian organoleptik melibatkan 33 panelis semi terlatih menunjukan bahwa F1 merupakan formulasi terbaik. Produk biscotti ini memiliki kandungan gizi per 100 g nya sebesar 509 kkal energi, 7,41 g protein, 29,4 g lemak, 53, 6 g karbohidrat dan 6,3 g serat pangan. Berdasarkan peraturan BPOM RI No 1 Tahun 2022 suatu produk pangan dikatakan tinggi/kaya serat jika minimal mengandung 6 gram serat pangan per 100 g produk. Biscotti umbi garut ini termasuk kedalam kategori camilan tinggi serat karena memiliki kandungan serat pangan yang memenuhi peraturan BPOM. Kata Kunci : Biscotti, serat, umbi garut, kedelai
       
      ASILAH DZAKIYYAH, Development of Biscotti Products Made from Garut Tuber Flour and Soybean Flour as a High-Fiber Snack Alternative. Supervised by ANI NURAENI. Fiber intake among Indonesians is relatively low. Fiber sources generally come from fruits and vegetables, but consumption levels remain insufficient, necessitating practical alternative sources of fiber. One approach that can be taken is the development of snacks made from arrowroot tubers, which are known to be high in fiber. This study aims to develop biscotti products based on garut tuber flour and soybean flour. The method used is an experimental design with a Completely Randomized Design (CRD). This study employed three formulations with different ratios of garut tuber flour and soybean flour, namely F1 (90%:10%), F2 (85%:15%), and F3 (80%:20%). Product analysis included organoleptic testing, proximate analysis, dietary fiber testing, shelf-life testing, and the contribution of nutrients to the Recommended Dietary Allowances (RDAs) and Nutrition Labeling Guidelines (NLG). Organoleptic testing involving 33 semi-trained panelists indicated that F1 was the best formulation. This garut tuber biscotti product has a nutritional content of 509 kcal, 7.41 g protein, 29.4 g fat, 53.6 g carbohydrates, and 6.3 g dietary fiber. According to Indonesian Food and Drug Administration (BPOM) Regulation No. 1 of 2022, a food product is considered high in fiber if it contains at least 6 grams of dietary fiber per 100 g of product. This garut tuber biscotti falls into the category of high-fiber snacks because its dietary fiber content meets BPOM regulations. Keywords: Biscotti, fiber, garut tuber, soybeans
