Modifikasi Produk Nengbokki Berbasis Tepung Talas Beneng (Xanthosoma undipes K.Koch) dengan Saus Pepaya (Carica papaya L.) sebagai Pangan Tinggi Serat
Abstract
Rendahnya konsumsi serat masyarakat Indonesia mendorong pengembangan pangan fungsional berbasis komoditas lokal. Penelitian ini bertujuan memperoleh formulasi terbaik nengbokki berbahan tepung talas beneng dengan saus pepaya sebagai pangan tinggi serat. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan tiga formulasi tepung, yaitu F1 (TTB 20 : TBK 60 : TTP 20), F2 (TBK 40 : TBK 40 : TTP 20), dan F3 (TTB 60 : TBK 20 : TTP 20), serta tiga konsentrasi pepaya pada saus (30%, 50%, dan 70%). Uji hedonik dilakukan terhadap 33 panelis semi terlatih. Data dianalisis menggunakan uji Kruskal–Wallis yang dilanjutkan dengan uji Mann–Whitney pada taraf signifikansi 5%, sedangkan formulasi terbaik ditentukan menggunakan Weighted Sum Model (WSM). Hasil penelitian menunjukkan bahwa formulasi berpengaruh nyata terhadap penampilan, warna, rasa, dan tekstur, tetapi tidak terhadap aroma. Formulasi F3 terpilih sebagai formulasi terbaik dengan skor penerimaan rata-rata 3,36. Analisis proksimat menunjukkan kandungan energi 175 kkal, protein 3,7%, lemak 1,5%, karbohidrat 36,6%, dan serat pangan 7,1 g per 100 g produk. Formulasi tersebut memenuhi persyaratan pangan tinggi serat sesuai Peraturan BPOM RI Nomor 1 Tahun 2022 sehingga berpotensi menjadi alternatif pangan fungsional berbasis bahan lokal. Low dietary fiber intake among Indonesians has encouraged the development of functional foods utilizing local commodities. This study aimed to determine the optimum formulation of nengbokki made from beneng taro flour with papaya sauce as a high-fiber food. A Completely Randomized Design (CRD) was applied using three flour formulations, namely F1 (20:60:20), F2 (40:40:20), and F3 (60:20:20), combined with three papaya concentrations in the sauce (30%, 50%, and 70%). Sensory acceptance was evaluated by 33 semi-trained panelists using a hedonic test. Data were analyzed using the Kruskal–Wallis test followed by the Mann–Whitney test at a 5% significance level, while the best formulation was selected using the Weighted Sum Model (WSM). The results indicated significant differences in appearance, color, taste, and texture, whereas aroma showed no significant difference. Formulation F3 achieved the highest mean acceptance score (3.36). Proximate analysis revealed 175 kcal of energy, 3.7% protein, 1.5% fat, 36.6% carbohydrate, and 7.1 g dietary fiber per 100 g of product. Therefore, F3 meets the Indonesian FDA (BPOM) requirement for a high-fiber food and has potential as a functional product based on local ingredients.
