dc.description.abstractSerat pangan masih sulit dipenuhi oleh remaja meskipun kebutuhan hariannya tertinggi di antara kelompok usia lain. Nori yang beredar di Indonesia umumnya masih berbahan baku impor (Porphyra spp.), sehingga pemanfaatan rumput laut lokal sebagai bahan pangan bernilai tambah belum optimal. Penelitian ini bertujuan mengembangkan nori berbahan dasar rumput laut Eucheuma cottonii dengan substitusi daun kelor, menganalisis karakteristik kimia dan tingkat penerimaan produk, serta mengetahui kontribusi gizinya terhadap kebutuhan remaja. Penelitian ini menggunakan desain eksperimental dengan Rancangan Acak Lengkap (RAL) tiga formulasi substitusi daun kelor yang berbeda, yaitu F1 (90:10), F2 (80:20), dan F3 (70:30). Analisis meliputi uji proksimat, serat pangan, dan organoleptik (hedonik) oleh 40 panelis. Formula terbaik adalah F2 (80:20) yang menghasilkan energi sebesar 515 kkal, protein 11,9 g, lemak 32,5 g, karbohidrat 43,5 g, dan serat pangan 35,9 g per 100 gram, sehingga memenuhi klaim "tinggi serat" sesuai Peraturan BPOM Nomor 1 Tahun 2022. Produk ini berpotensi menjadi camilan tinggi serat bagi remaja sekaligus mendukung pemanfaatan rumput laut lokal.
dc.description.abstractDietary fiber is still difficult for adolescents to meet even though their daily needs are highest among other age groups. Nori circulating in Indonesia is generally still imported (Porphyra spp.), so the use of local seaweed as a value-added food ingredient is not optimal. This research aims to develop nori made from seaweed Eucheuma cottonii with moringa leaf substitution, analyze the chemical characteristics and acceptance rate of the product, and determine its nutritional contribution to the needs of adolescents. This study used an experimental design with a Completely Randomized Design (RAL) of three different moringa leaf substitution formulations, namely F1 (90:10), F2 (80:20), and F3 (70:30). The analysis included proximate, dietary fiber, and organoleptic (hedonic) tests by 40 panelists. The best formula is F2 (80:20), which produces energy of 515 kcal, protein 11.9 g, fat 32.5 g, carbohydrates 43.5 g, and dietary fiber 35.9 g per 100 grams, thus meeting the "high fiber" claim according to BPOM Regulation Number 1 of 2022. This product has the potential to be a high-fiber snack for teenagers while supporting the use of local seaweed.
