| dc.description.abstract | Tingginya kebutuhan asam folat selama kehamilan mendorong pengembangan produk pangan fungsional yang praktis dan bergizi. Penelitian ini bertujuan mengembangkan brownies crispy brokoli sebagai camilan sumber asam folat untuk ibu hamil. Penelitian menggunakan Rancangan Acak Lengkap (RAL) satu faktor, yaitu penambahan brokoli sebesar 50% (F1), 60% (F2), dan 70% (F3). Uji organoleptik dilakukan terhadap 109 panelis semi-terlatih menggunakan skala hedonik 7 poin pada atribut warna, aroma, rasa, dan tekstur. Data dianalisis menggunakan uji Kruskal-Wallis dan Mann-Whitney. Hasil penelitian menunjukkan terdapat perbedaan nyata pada atribut aroma, rasa, dan tekstur (p<0,05). Formula F2 dengan penambahan brokoli 60% dipilih sebagai formula terbaik dengan nilai rata-rata kesukaan tertinggi sebesar 5,2. Analisis kandungan gizi formula F2 per 100 g menunjukkan kadar air 5,31%, abu 1,48%, protein 9,06%, lemak 24,47%, karbohidrat 59,70%, energi total 495,19 kkal, dan asam folat 101 mcg. Kandungan asam folat tersebut menunjukkan bahwa produk berpotensi sebagai camilan sumber folat bagi ibu hamil. | |
| dc.description.abstract | The increased folate requirement during pregnancy encourages the development of practical and nutritious functional foods. This study aimed to develop broccoli crispy brownies as a folate-rich snack for pregnant women. A Completely Randomized Design (CRD) with one factor, namely broccoli addition levels of 50% (F1), 60% (F2), and 70% (F3), was applied. Organoleptic evaluation was conducted with 109 semi-trained panelists using a 7-point hedonic scale for color, aroma, taste, and texture attributes. Data were analyzed using Kruskal-Wallis and Mann-Whitney tests. The results showed significant differences in aroma, taste, and texture attributes (p<0.05). Formula F2 containing 60% broccoli was selected as the best formulation with the highest mean hedonic score of 5.2. Nutritional analysis of F2 per 100 g showed 5.31% moisture, 1.48% ash, 9.06% protein, 24.47% fat, 59.70% carbohydrate, 495.19 kcal total energy, and 101 mcg folate. These results indicate that the product has potential as a folate-rich snack for pregnant women. | |
