      Ekstraksi Oleoresin Kayu Manis (Cinnamomum burmannii) dengan Bantuan Gelombang Mikro (Microwave-Assisted Extraction (MAE))

      Abstract
      Oleoresin kayu manis (Cinnamomum burmannii) merupakan produk ekstraksi bernilai tinggi yang mengandung senyawa bioaktif volatil dan nonvolatil. Metode Microwave-Assisted Extraction (MAE) berpotensi meningkatkan efisiensi proses dibandingkan metode konvensional. Namun, penentuan waktu ekstraksi yang optimal masih menjadi tantangan karena dapat memengaruhi rendemen dan mutu oleoresin yang dihasilkan. Penelitian ini bertujuan menganalisis pengaruh variasi waktu ekstraksi pada metode MAE terhadap rendemen dan kualitas oleoresin kayu manis serta menentukan waktu ekstraksi yang optimal. Ekstraksi dilakukan menggunakan etanol 96% dengan rasio bahan dan pelarut 1:4, daya microwave 100 W, serta variasi waktu ekstraksi 10, 15, 20, 25, dan 30 menit. Parameter yang diamati meliputi rendemen, indeks bias, warna (L*, a*, b*, chroma, dan hue), serta konsumsi energi. Hasil penelitian menunjukkan bahwa waktu ekstraksi berpengaruh nyata (p<0,05) terhadap rendemen, indeks bias, dan nilai b* warna, tetapi tidak berpengaruh nyata (p>0,05) terhadap nilai L*, a*, chroma, dan hue. Rendemen tertinggi diperoleh pada waktu ekstraksi 10 menit sebesar 19,68%, sedangkan indeks bias tertinggi diperoleh pada waktu ekstraksi 20 menit sebesar 1,4919. Berdasarkan evaluasi rendemen, indeks bias, karakteristik warna, dan energi spesifik, waktu ekstraksi optimum diperoleh pada perlakuan 20 menit yang menghasilkan rendemen 15,65%, indeks bias 1,4919, warna coklat tua, dan energi spesifik sebesar 1,2 kJ/g. Metode MAE menghasilkan oleoresin kayu manis dengan mutu yang baik dalam waktu ekstraksi yang relatif singkat dan penggunaan energi yang lebih efisien.
       
      Cinnamon oleoresin (Cinnamomum burmannii) is a high-value extract containing both volatile and non-volatile bioactive compounds. Microwave-Assisted Extraction (MAE) has the potential to improve extraction efficiency compared with conventional extraction methods. However, determining the optimum extraction time remains challenging because it affects both oleoresin yield and quality. This study aimed to evaluate the effect of extraction time on the yield and physical quality of cinnamon oleoresin and to determine the optimum extraction time using MAE. Extraction was performed using 96% ethanol with a solid-to-solvent ratio of 1:4, microwave power of 100 W, and extraction times of 10, 15, 20, 25, and 30 min. The observed parameters included yield, refractive index, color characteristics (L*, a*, b*, chroma, and hue), and specific energy consumption. The results showed that extraction time significantly affected (p<0.05) yield, refractive index, and b* value, but had no significant effect (p>0.05) on L*, a*, chroma, and hue. The highest yield (19,68%) was obtained at 10 min, whereas the highest refractive index (1,4919) was obtained at 20 min. The optimum extraction time was 20 min, producing a yield of 15,65%, refractive index of 1,4919, dark brown color, and specific energy consumption of 1,2 kJ/g. MAE produced cinnamon oleoresin with good physical quality in a relatively short extraction time and efficient energy utilization.
