Pengembangan Muffin Hi! Meggie sebagai Alternatif Snack untuk Remaja
Abstract
Data Survei Kesehatan Indonesia (2023) menunjukkan bahwa prevalensi gizi kurang, gizi lebih, dan obesitas pada remaja masih menjadi masalah gizi yang perlu mendapat perhatian. Rendahnya konsumsi buah dan sayur pada 97,3% penduduk usia =5 tahun turut mengindikasikan belum terpenuhinya kebutuhan serat harian remaja. Penelitian ini bertujuan mengembangkan Muffin Hi! Meggie berbahan wortel, bayam hijau, dan daging ayam sebagai alternatif snack sehat untuk remaja. Penelitian menggunakan metode eksperimen dengan Rancangan Acak Lengkap (RAL) yang terdiri dari tiga formulasi, yaitu F1, F2, dan F3. Uji organoleptik dilakukan pada 35 panelis semi terlatih, sedangkan analisis data menggunakan uji Shapiro-Wilk, Kruskal-Wallis, serta uji lanjut sesuai kebutuhan. Formulasi terbaik ditentukan menggunakan Weighted Sum Method (WSM). Hasil menunjukkan F1 sebagai formulasi terpilih dengan tingkat penerimaan terbaik. Muffin F1 memiliki kandungan energi 313 kkal, protein 7,5g, lemak 14,7g, karbohidrat 37,7g, dan serat 6,8g per 100g. Produk ini juga berkontribusi 13–17,8% terhadap AKG serat remaja dan berpotensi sebagai snack sehat tinggi serat untuk remaja. The 2023 Indonesia Health Survey (SKI) reported that the prevalence of undernutrition, overweight, and obesity among adolescents continues to be a major public health concern. Low fruit and vegetable consumption among 97.3% of the population aged =5 years suggests that adolescents may not meet their recommended daily dietary fiber intake. This study aimed to develop Hi! Meggie muffins made from carrots, green spinach, and chicken meat as a healthy snack alternative for adolescents. This study employed an experimental method using a Completely Randomized Design (CRD) with three formulations, namely F1, F2, and F3. Sensory evaluation was conducted with 35 semi-trained panelists, while data analysis was performed using the Shapiro-Wilk test, Kruskal-Wallis test, and appropriate post-hoc tests when required. The best formulation was determined using the Weighted Sum Method (WSM). The results showed that F1 was the selected formulation with the highest acceptance level. The F1 muffin contained 313 kcal, 7,5g protein, 14,7g, fat, 37,7g carbohydrates, and 6,8g dietary fiber per 100g. The product contributed 13–17,8% of the Recommended Dietary Allowance (RDA) for fiber in adolescents and has potential as a high-fiber healthy snack for adolescents.
