Pemanfaatan Pisang Ambon Lumut (Musa paradisiaca var. sapientum) dalam Pembuatan Yogurt untuk Remaja
Abstract
Prevalensi obesitas pada remaja Indonesia mengalami peningkatan signifikan dari 21,8% pada tahun 2018 menjadi 37,1% pada tahun 2023. Penelitian ini bertujuan mengembangkan produk berupa yogurt pisang ambon lumut (YO LUBON) sebagai alternatif camilan sehat bagi remaja. Penelitian menggunakan metode true experimental dengan Rancangan Acak Lengkap (RAL) tiga formulasi berdasarkan variasi penambahan selai pisang ambon lumut, yaitu F1 (30 g), F2 (50 g), dan F3 (70 g) pada yogurt dengan 40% sari kulit pisang ambon lumut. Uji organoleptik dilakukan oleh 63 panelis. Hasil uji organoleptik menunjukkan formulasi F3 sebagai formulasi terpilih berdasarkan Weight Sum Method. Hasil uji proksimat formulasi terpilih menunjukkan kandungan energi sebesar 69,83 kkal, protein 2,06 gram, lemak 1,03 gram, karbohidrat 13,08 gram, dan abu 0,78 gram per 100 gram produk. Produk YO LUBON memenuhi kriteria pangan lebih rendah energi dengan rata-rata penurunan sebesar 43,74% dibandingkan lima produk sejenis. Berdasarkan Peraturan BPOM Nomor 1 Tahun 2022, kadar lemak YO LUBON memenuhi kriteria klaim rendah lemak. Kadar abu telah memenuhi SNI 2981:2009, sedangkan kadar protein belum memenuhi standar minimum. This study aimed to develop a banana yogurt product named YO LUBON as a healthy snack alternative for adolescents. This research employed a true experimental method using a Completely Randomized Design (CRD) with three formulations based on the variation of Ambon banana jam addition, namely F1 (30 g), F2 (50 g), and F3 (70 g), combined with yogurt containing 40% Ambon banana peel extract. Organoleptic testing was conducted involving 63 panelists. The organoleptic test results indicated that F3 was selected as the best formulation based on the Weight Sum Method. Proximate analysis of the selected formulation showed that the product contained 69.83 kcal of energy, 2.06 g of protein, 1.03 g of fat, 13.08 g of carbohydrates, and 0.78 g of ash per 100 g of product. YO LUBON met the criteria for a lower-energy food product with an average energy reduction of 43.74% compared with similar products. Based on the Indonesian Food and Drug Authority Regulation Number 1 of 2022, the fat content of YO LUBON fulfilled the criteria for a low-fat claim. The ash content complied with SNI 2981:2009, while the protein content did not meet the minimum standard.
