      Preferensi Konsumen dan Willingness to Pay Buah Salak Sleman di DIY dan Jawa Tengah

      Abstract
      Buah salak merupakan komoditas unggulan Kabupaten Sleman dengan produktivitas tinggi sehingga banyak dikonsumsi masyarakat di DIY dan Jawa Tengah. Penelitian ini bertujuan menganalisis preferensi konsumen serta Willingness to Pay (WTP) terhadap atribut buah salak Sleman menggunakan metode deskriptif dan Discrete Choice Experiment (DCE). Atribut yang diuji meliputi harga, rasa, tekstur daging, dan bentuk pembelian. Hasil penelitian menunjukkan bahwa kombinasi atribut yang paling disukai konsumen adalah salak dengan rasa manis, harga Rp7.000,00/kg, tekstur renyah, dan bentuk pembelian protolan. Atribut rasa menjadi faktor yang paling diprioritaskan konsumen dibandingkan atribut lainnya. Nilai WTP menunjukkan bahwa konsumen bersedia membayar tambahan Rp4.755,00/kg untuk rasa manis dan Rp581,00/kg untuk bentuk pembelian protolan. Sementara itu, tekstur masir memperoleh WTP negatif (-Rp4.057,00/kg), menandakan bahwa konsumen lebih menghargai tekstur renyah dan berhak menerima kompensasi sebesar nilai WTP untuk tekstur yang masir.
       
      Snake fruit is a leading commodity in Sleman Regency with high productivity, making it widely consumed by people in Yogyakarta and Central Java. This study aims to analyze consumer preferences and Willingness to Pay (WTP) for Sleman salak fruit attributes using descriptive and Discrete Choice Experiment (DCE) methods. The attributes tested include price, taste, flesh texture, and purchase form. The results show that the combination of attributes most preferred by consumers is salak with a sweet taste, a price of IDR 7,000/kg, a crisp texture, and a protolan purchase form. Taste is the attribute that consumers prioritize most compared to other attributes. The WTP value shows that consumers are willing to pay an additional IDR 4,755/kg for sweet taste and IDR 581/kg for protolan purchase form. Meanwhile, less crispy texture received a negative WTP (-IDR 4,057/kg), indicating that consumers value crispy texture more and are entitled to compensation equal to the WTP value for a less crispy texture.
