      Uji Performansi Mesin Pengaduk Tipe Horizontal Rotay Blade untuk Proses Ekstraksi Pati Singkong

      Abstract
      Uji performansi mesin pengaduk tipe Horizontal Rotary Blade untuk proses ekstraksi pati singkong dikaji pada tiga variasi kecepatan putar 151 ± 0,1 RPM, 247 ± 0,1 RPM, dan 367 ± 0,1 RPM serta tiga volume penambahan air yaitu 0, 1,5, dan 3 liter dalam operasi batch 5 menit dengan muatan sekitar 2 kg. Penelitian ini bertujuan menentukan kombinasi optimal pada berbagai kecepatan putar dan volume air. Metode meliputi pengukuran rendemen pati basah, rendemen pati kering, kadar air basah dan kering, total padatan, kehilangan pati dan kebutuhan energi, serta untuk menentukan kombinasi optimal menggunakan Simple Additive Weighting (SAW). Hasil menunjukkan interaksi putaran dan volume air memengaruhi seluruh keluaran proses di mana rendemen pati basah tertinggi 7,21% dan rendemen pati kering tertinggi 20,5% terjadi pada M-367-A3. Kadar air kering pasca pengeringan masih melampaui ambang SNI 3451:2011 sebesar 14%, khususnya pada penambahan 3 liter air yaitu 24,03% hingga 25,29% sehingga diperlukan pengeringan lebih lanjut agar mutu terpenuhi. Kebutuhan energi meningkat seiring kenaikan putaran dan volume air. Berdasarkan pemeringkatan SAW, M-367-A3 ditetapkan sebagai kondisi operasi optimal yang secara praktis direalisasikan pada 367 ± 0,1 RPM dengan penambahan 3 liter air selama sekitar 5 menit per batch.
       
      The performance test of the Horizontal Rotary Blade type mixer machine for the cassava starch extraction process was studied at three variations of rotation speeds of 151 ± 0.1 RPM, 247 ± 0.1 RPM, and 367 ± 0.1 RPM, combined with three levels of water addition of 0, 1.5, and 3 liters in a 5-minute batch operation with a load of approximately 2 kg. The study aimed to determine the optimal combination of rotational speed and water volume. The method included measurements of wet and dry starch yield, moisture content (wet and dry), total solids, starch loss, and energy consumption. The Simple Additive Weighting (SAW) method was employed to identify the optimal condition. Results indicated that the interaction between rotational speed and water volume significantly influenced all process outcomes. The highest wet starch yield of 7.21% and the highest dry starch yield of 20.5% were obtained at M-367-A3. The post-drying moisture content exceeded the SNI 3451:2011 standard limit of 14%, particularly with 3 liters of water addition, reaching 24.03%–25.29%, indicating that additional drying was required to meet quality standards. Energy consumption increased with both higher rotational speed and greater water addition. Based on SAW ranking, M-367-A3 was determined as the optimal operating condition, practically realized at 367 ± 0.1 RPM with 3 liters of water addition for approximately 5 minutes per batch.
