      Peningkatan Nilai Tambah Susu Sapi menjadi Olahan Dodol Susu Moolôka Cipta Rasa Farm Kabupaten Bogor

      Abstract
      Cipta Rasa Farm merupakan salah satu peternakan sapi perah yang berada di Kabupaten Bogor, Jawa Barat. Permasalahan yang dihadapi oleh Cipta Rasa Farm saat ini yaitu adanya sisa susu yang tidak tersalurkan kepada pasar sehingga hanya dijual kepada KPS dengan harga cukup murah. Mengatasi hal tersebut dilakukan peningkatan nilai tambah susu sapi menjadi olahan dodol susu yang dapat untuk memanfaatkan sisa susu sehingga perusahaan dapat menghasilkan keuntungan yang lebih maksimal dari sebelumnya. Penelitian ini bertujuan untuk mengetahui nilai tambah dari produk olahan dodol susu menggunakan metode Hayami dan untuk mengetahui kelayakan bisnis melalui aspek non finansial dan finansial. Hasil nilai tambah yang dihasilkan dari pengolahan susu sapi menjadi dodol susu yaitu sebesar Rp82.219 dengan rasio nilai tambah sebesar 47,52%. Bisnis olahan dodol susu dinyatakan layak dengan nilai R/C ratio sebesar 1,37 per tahun. Usaha mencapai titik impas pada penjualan Rp154.728.000 untuk varian original dan Rp120.517.000 untuk varian wijen.
       
      Cipta Rasa Farm is one of the dairy farms located in Bogor Regency, West Java. The current issue faced by Cipta Rasa Farm is the presence of unsold milk that cannot be channeled to the market, resulting in it being sold to KPS at a relatively low price. To address this, the added value of cow's milk is enhanced by processing it into milk dodol, thereby utilizing the unsold milk and enabling the company to generate maximum profits compared to before. This study aims to determine the value added of milk dodol products using the Hayami method and to assess the business viability through non-financial and financial aspects. The value added generated from processing cow's milk into milk dodol is Rp82,219 with a value-added ratio of 47.52%. The milk dodol processing business is deemed viable with an R/C ratio of 1.37 per year. The business reaches the break-even point at sales of Rp154,728,000 for the original variant and Rp120,517,000 for the sesame variant.
