Pengaruh Inovasi Bisnis terhadap Kinerja Usaha Kedai Kopi di Kabupaten Ciamis
Abstract
Saat ini agribisnis kopi di Indonesia terus berkembang termasuk pertumbuhan bisnis minuman kopi baik di kota besar maupun di daerah. Hal ini mengindikasikan adanya peluang bisnis kopi dalam membuka atau mengembangkan kedai kopi. Meskipun demikian, para pelaku bisnis kedai kopi juga menghadapi tantangan agar kinerja usahanya berkelanjutan. Oleh karena itu, para pelaku bisnis kedai kopi dituntut untuk terus melakukan inovasi bisnisnya. Penelitian ini bertujuan menganalisis pengaruh inovasi produk, proses, pemasaran dan manajemen terhadap kinerja usaha kedai kopi di Ciamis. Data diperoleh dari survei terhadap 118 informan kunci dari 42 kedai kopi di Ciamis pada bulan Januari – Maret 2024. Data dianalisis menggunakan analisis deskriptif, Partial Least Square Structural Equation Model dan Importance-Performance Map Analysis. Hasil penelitian menunjukkan bahwa salah satu dimensi inovasi proses yaitu bahan tambahan sebagai dimensi prioritas mampu meningkatkan kinerja usaha kedai kopi di Ciamis sedangkan dimensi lainnya tidak. Hasil penelitian juga menunjukkan bahwa inovasi produk, pemasaran, dan manajemen tidak berpengaruh signifikan. Currently, the coffee agribusiness in Indonesia continues to develop, including the growth of the coffee beverage business both in big cities and regions. This indicates opportunities from a coffee business perspective in opening or developing a coffee shop. However, coffee shop business entrepreneurs also face challenges so their business performance is sustainable. Therefore, coffee shop business entrepreneurs are required to continue to innovate their businesses. This research aims to analyze the influence of innovation of product, process, marketing, and management on the performance of coffee shop businesses in Ciamis. Data was obtained from a survey of 118 key informants from 42 coffee shops in Ciamis in January - March 2024. The data was analyzed using descriptive analysis, Partial Least Square Structural Equation Model and the Importance-Performance Map Analysis. The research results show that one of the dimensions of process innovation namely additional ingredients as a priority dimension, has increased business performance in Ciamis coffee shops, but other dimensions of process innovation do not improve business performance. The research results also show that product innovation, marketing, and management do not significantly affect.
