dc.description.abstract | Wortel merupakan tanaman hortikultura dengan kandungan karotenoid yang
tinggi. Hal ini membuat kebutuhan wortel sebagai bahan pangan pada industi
pengolahan terus meningkat. Industri pangan mengolah wortel segar menjadi
produk kering menggunakan teknologi pengeringan. Teknologi pengeringan terus
dikembangkan untuk menjaga mutu karotenoid. Selain untuk mempertahankan
kandungannya, perubahan karotenoid juga berdampak pada perubahan tampilan
visual wortel hasil pengeringan.
Wortel segar mempunyai kadar air berkisar 90±2% sehingga perlu diberikan
pre-treatment sebelum dilakukan pengeringan. Pre-treatment osmotik ditujukan
untuk mengurangi air dalam bahan dengan cara merendam bahan dalam larutan
osmotik. Jenis larutan, suhu dan waktu perendaman berpengaruh terhadap jumlah
air yang dapat diserap. Hasil dehidrasi osmotik berupa wortel semi basah sehingga
dilanjutkan dengan pengeringan. Metode pengeringan akan berpengaruh terhadap
hasil akhir produk wortel kering.
Tujuan penelitian adalah mengkaji pengaruh suhu dehidrasi osmotik dengan
larutan terner terhadap mutu wortel semi basah hasil dehidrasi dan mutu wortel
kering serta untuk mengkaji pengaruh metode pegeringan lanjutan yaitu metode
oven dan infra merah terhadap mutu wortel kering. Penelitian ini merupakan
penelitian eksperimen dengan dua rancangan percobaan. Rancangan pertama
adalah percobaan dehidrasi osmotik dengan dua perlakuan suhu larutan osmotik
yaitu dan 50 yang datanya dianalisa menggunakan perbandingan dua beda
nilai tengah. Rancangan kedua adalah kombinasi dehidrasi osmotik dengan
pengeringan yang dirancang menggunakan Rancangan Acak Lengkap (RAL)
Faktorial dengan 2 faktor. Faktor pertama adalah dehidrasi osmotik ada dua taraf
dan faktor ke dua adalah metode pengeringan lanjutan dengan suhu 50 yaitu
pengeringan oven dan pengeringan infra merah. Data dianalisa menggunakan
ANOVA dan bila ada data yang berbeda nyata dianalisa lanjut menggunakan uji
BNJ (beda nyata jujur) pada taraf α=5%.
Bahan utama adalah wortel segar dengan umur panen 60-85 HST dari
petani di Pagaralam, Sumatera Selatan. Varietas wortel adalah Nantes dengan
kelas mutu grade B yang memiliki panjang 15-22 cm dan diameter 3-4 cm. Wortel
segar dihilangkan bagian pangkal dan ujung untuk menghasilkan ukuran wortel
yang relative seragam. Wortel kemudian dipotong menjadi irisan lingkaran
dengan tebal 3 mm. Bahan larutan osmotik berupa gula pasir, garam halus dan
aquades. Larutan osmotik dibuat dengan melarutkan gula pasir pada aquades
panas dengan rasio 1:2 (b/v) menghasilkan larutan dengan nilai 50oBrix. Garam
sebanyak 3% (b/v) ditambahkan pada larutan tersebut dan diaduk hingga
menghasilkan larutan sempurna (tidak ada partikel).
Proses dehidrasi osmotik dilakukan dengan cara irisan wortel dengan berat
300 g direndam dalam larutan osmotik 600 ml dengan konsentrasi 50oBrix
kemudian dimasukkan ke dalam water bath suhu 25 dan 50 dengan waktu
perendaman selama 3 jam. Kemudian dicuci dengan air yang mengalir dan
dikeringkan menggunakan kertas saring sampai tidak ada air yang menetes.
Parameter yang digunakan dalam proses ini yaitu kehilangan air, peningkatan
padatan bahan dan rendemen.
Proses pengeringan terbagi menjadi dua yaitu pengeringan dengan oven dan
pengering infra merah. Wortel pasca dehidrasi osmotik dikeringkan menggunakan
suhu 50 sampai kadar air mencapai maksimal ±10%. Parameter yang digunakan
untuk mengetahui pengaruh metode pengeringan terhadap mutu wortel adalah
kadar air, total padatan terlarut dan karotenoid.
Evaluasi hasil pengeringan juga dilakukan dengan penyimpanan. Sampel
wortel yang sudah kering ditimbang sebanyak 20 g dan dikemas dalam plastik
zipper bag kemudian disimpan selama 14 hari pada suhu ruang (22-26 ).
Parameter yang diukur yaitu, karotenoid, tekstur, warna, TPT, rehidrasi dan uji
organoleptik. Hipotesis dari penelitian ini adalah 1) ada pengaruh suhu larutan
osmotik terhadap karakteristik wortel kering, 2) ada pengaruh metode
pengeringan lanjutan terhadap karakteristik wortel kering. Kode dari perlakuan
suhu pada media osmotik adalah A1=25 dan A2=50 . Sedangkan kode untuk
pengeringan lanjutan adalah, B1=pengeringan oven dan B2=pengeringan infra
merah sehingga A1B1 adalah dehidrasi suhu 25 dan pengeringan lanjut metode
oven, A1B2 adalah dehidrasi suhu 25 dan pengeringan lanjut metode infra merah,
A2B1 adalah dehidrasi suhu 50 dan pengeringan lanjut metode oven dan A2B2
adalah dehidrasi suhu 50 dan pengeringan lanjut metode infra merah.
Perlakuan dehidrasi osmotik suhu A1 menghasilkan kehilangan air sebesar
37,79%, peningkatan padatan 17,87% dan rendemen mencapai 80,45%.
Sedangkan perlakuan A2 menghasilkan kehilangan air 44,24%, peningkatan
padatan 18,31% dan rendemen 74,06%. Kombinasi perlakuan A1B2 memberikan
hasil wortel kering dengan waktu pengeringan 10 jam untuk mencapai kadar air
10,37%, nilai total padatan terlarut 49,86oBrix serta karotenoid 35,92 mg/100 g
dengan daya rehidrasi 235,80%. Setelah dilakukan penyimpanan 14 hari diperoleh
nilai karotenoid pada perlakuan A1B1 dan A1B2 menurun menjadi 32,95 mg/100 g
dan 31,94 mg/100 g. Berdasarkan uji organoleptik, parameter warna memiliki
skor berkisar antara 5,07-6,60, tekstur berkisar antara 4,13-5,20 dan rasa berkisar
antara 4,73-6,40. Dari ke tiga parameter tersebut kombinasi dehidrasi osmotik
50 dan infra merah lebih disukai karena memiliki warna lebih cerah hampir
sama dengan warna asli bahan, hasil ini sama untuk uji warna pada laboratorium.
Perlakuan terbaik untuk menghasilkan wortel kering dengan mutu yang baik
adalah dehidrasi osmotik suhu 25 baik menggunakan pengeringan oven maupun
infra merah. Kombinasi tersebut menghasilkan kehilangan air sebesar 37,79%,
waktu pengeringan 10 jam dengan warna yang cerah dan kemampuan daya
rehidrasi hampir mendekati produk wortel kering pada industri pangan sebesar
193,78% dan 235,80%. Selain itu kombinasi tersebut mampu mempertahankan
kandungan karotenoid dengan nilai 38,29 mg/100 g dan 35,92 mg/100 g. | id |
dc.description.abstract | Carrots are a type of horticultural product with a high carotenoid content.
Therefore, the demand for carrots as a food ingredient in the processing industry
is increasing. The food industry processes fresh carrots into dry products using
drying technology. Drying technology is still being developed, specifically to
preserve the quality of carotenoids. Changes in carotenoids impact the visual
appearance of dried carrots in addition to maintaining their content.
Fresh carrots have a moisture content ranging from 90±2%, they must be
pre-treatment before drying. Osmotic pre-treatment reduces the amount of water
in a material by immersing it in an osmotic solution. The amount of water that can
be absorbed is affected by the type of solution, temperature, and immersion time.
Because the result of osmotic dehydration is semi-wet carrots, it is followed by
drying. The drying method has an impact on the finished product of dried carrots.
The aim of this study was to investigate the effect of osmotic dehydration
temperature with the ternary solution on the quality of dehydrated semi-wet
carrots and dry carrots, as well as the effect of further drying methods, specifically
the oven and infrared methods, on the quality of dried carrots. This is an
experimental study with two experimental designs. The first designs is an osmotic
dehydration experiment with two osmotic solution temperatures, 25 and 50 ,
with data analyzed by comparing two different mean values. The second design
was a factorial Completely Randomized Design (CRD) with two factors that
combine osmotic dehydration and drying. The first factor is osmotic dehydration,
which has two levels, and the second factor is the further drying method at 50 ,
which includes oven drying and infrared drying. The data were analyzed using
ANOVA, and if there were significant differences, the BNJ test (honestly
significant difference) at the level of α=5% was used.
The main ingredient is fresh carrots harvested of 60-85 HST from farmers in
Pagaralam, South Sumatra. The variety of carrots was called nantes carrots, which
have a length of 15-22 cm and a diameter of 3-4 cm. to achieve relatively uniform
carrot size, fresh carrots were removed at the base and tip. The carrots were then
sliced into 3 mm thick circular slices. The ingredients for the osmotic solution are
granulated sugar, fine salt and aquades. The osmotic solution is prepared by
dissolving granulated sugar in aquades with a ratio of 1:2 (w/v) to solve with a
value of 50oBrix. Salt up to 3% (w/v) is added to the solution and stirred until a
perfect solution is obtained (no particles).
The osmotic dehydration process was carried out by soaking 300 g carrot
slices in 600 ml of 50oBrix osmotic solution and then placing them in a water bath
at 25 and 50 for 3 hours of soaking time. The item was then washed with
running water and dried with filter paper until no water dripped. Water loss, solids
gain, and yield were the parameters used in this process.
The drying process was divided into two stages: oven and infrared. After
osmotic dehydration, carrots were dried at 50 until the moisture content reached
a maximum of ±10%. Water content, total dissolved solids, and carotenoids were
the parameters used to determine the effect of the drying method on carrot quality.
The drying results were evaluated not only immediately after drying but also
after storage. The dried carrot samples were weighed up to 20 g, packaed in
plastic zipper bags, and stored at room temperature for 14 days (22-26 ).
carotenoids, texture, color, total dissolved solids, rehydration, and organoleptic
tests were all measuered. This study hypothesized that 1) osmotic solution
temperature has an effect on the characteristics of dried carrorts, and 2) the further
drying method has an effects on the characteristics of dried carrots. The code for
the osmotic solution temperature treatment is A1=25 and A2=50 . The code
continued drying is, B1=oven drying and B2=infrared drying so that A1B1 is
dehydration temperature 25 and further drying by oven, A1B2 is dehydration
temperature 25 and infrared drying method, A2B1 is dehydration temperature
50 and further drying by oven method, and A2B2 is dehydration temperature
50 and further drying by an infrared method.
The A1 osmotic dehydration treatment resulted in a 37,79% water loss, a
17,87% solid gain, and an 80,45% yield. At the same time, the A2 treatment
resulted in a 44,24% water loss, an 18,31% solid gain, and a 74,06% yield. The
combination of A1B2 treatment resulted in dried carrots with a moisture content of
10,37%, a total dissolved solids value of 49,86oBrix, and carotenoids 35,92
mg/100 g with a rehydration power of 235,80% after a drying time of 10 hours.
After 14 days of storage, the carotenoid levels in the A1B1 and A1B2 treatments
were 32,95 mg/100 g and 31,94 mg/100 g, respectively. Color had a score of 5,07-
6,60 on the organoleptic test, texture had a score of 4,13-5,20, and taste had a
score of 4,73-6,40. The combination of osmotic dehydration at 50 and infrared
was preferred of the three parameters because it produced a brighter color nearly
identical to the original color of the material: these results were consistent with
laboratory color tests.
Osmotic dehydration 50 using oven drying or infrared is the best method
for producing high-quality dried carrots. This combination resulted in a wster loss
of 37,79%, a drying time of 10 hours with a bright color, and a rehydration ability
that was almost identical to that of dried carrot products in the food industry,
which were 193,78% and 235,80%, respectively. Furthermore, this combination
maintained carotenoid content of 38,29 mg/100 g and 35,92 mg/100 g. | id |
