      Abstract
      Produksi nasi instan pada mitra penelitian dengan menggunakan fluidized bed dryer (FBD) memiliki kapasitas produksi 1-1,5 kg/batch dan memerlukan peningkatan kapasitas. Penelitian ini bertujuan menganalisis kebutuhan fungsional dan struktural FBD, merancang bangun FBD, merancang SOP mesin, Menguji performa FBD, dan mengukur kadar air nasi instan. Penelitian dilaksanakan di PT. Manggala, dengan prosedur penelitian yang meliputi identifikasi masalah, penentuan parameter rancangan, analisis rancangan, pabrikasi, dan uji performansi. FBD memiliki daya 2,1 kW dengan kapasitas 10 kg/batch. FBD dirancang memiliki komponen utama meliputi hepa filter, blower, heat exchanger, air tunnel, chamber, dan mesh. Rancangan FBD (chamber tunggal) hasil peningkatan, dapat mengeringkan nasi dari 85 menit menjadi 55 menit untuk 1 kg nasi putih instan, dan dari 595 menit menjadi 165 menit untuk 10 kg nasi liwet instan, sedangkan rancangan FBD dengan chamber bertingkat dapat mengeringkan nasi dari 595 menit menjadi 220 menit lebih cepat untuk nasi kuning instan. Kadar air nasi instan diuji terhadap 12 sampel dengan rata-rata kadar air yang didapat berkisar 7,3-11,52 % dan telah memenuhi standar BPOM yaitu kadar air dibawah 14%.
       
      Instant rice production at research partners using a fluidized bed dryer (FBD) has a production 1–1.5 kg/batch capacity and requires a capacity increase. This study aims to analyze the functional and structural FBD requirements, design the FBD, design the machine SOP, test the FBD performance, and measure the instant rice moisture content. Research is conducted at PT. Manggala, with research procedures that include problem identification, design parameter determination, design analysis, manufacturing, and performance testing. FBD has a power of 2,1 kW and a 10 kg/batch capacity. FBD is designed to have six main components, including a hepa filter, blower, heat exchanger, air tunnel, chamber, and mesh. The improved FBD (single chamber) design can dry rice from 85 minutes to 55 minutes for 1 kg of instant white rice and from 595 minutes to 165 minutes for 10 kg of instant long grain rice, while the FBD design with multilevel chambers can dry rice from 595 minutes to 220 minutes faster for instant yellow rice. Instant rice water content was tested on 12 samples, with an average moisture content obtained ranging from 7.3 to 11.52%, and has met BPOM standards, namely water content below 14%.
