Karakteristik Fisikokimia Tepung Singkong dengan Tiga Cara Modifikasi dan Optimasi Proses Pembuatan Mi Singkong
Abstract
Mi merupakan salah satu produk pangan yang dalam proses pembuatannya masih didominasi oleh tepung terigu, sementara itu gandum sebagai bahan baku dalam pembuatan tepung terigu perlu diimpor dari luar negeri ke Indonesia. Sumber bahan baku lokal yang belum banyak dimanfaatkan di Indonesia adalah singkong. Pengolahan singkong merupakan salah satu alternatif dalam pembuatan mi. Tepung singkong alami memiliki kelemahan pada sifat fungsional dan kandungan amilosa yang rendah sehingga perlu dimodifikasi.
Penelitian ini bertujuan untuk membandingkan berbagai teknik modifikasi tepung singkong (fermentasi spontan, tepung gaplek, dan Heat Moisture Treatment/HMT) terhadap sifat fungsional dan kadar amilosa tepung, memilih satu teknik modifikasi tepung singkong yang memiliki sifat fungsional terbaik dan kadar amilosa tertinggi, serta mendapatkan kombinasi variabel formula (jumlah tepung dan jumlah air) dan variabel proses (suhu ekstrusi dan kecepatan screw esktruder) yang optimum dalam pembuatan mi berbahan baku tepung singkong modifikasi. Penelitian ini terdiri dari 2 tahap, yaitu pembuatan tepung singkong dengan beberapa modifikasi dan optimasi formula dan proses pembuatan mi singkong menggunakan rancangan penelitian Response Surface Methodology (RSM) yaitu combined design. Pembuatan mi singkong dilakukan dengan ekstruder ulir tunggal pemasak pencetak. Analisis yang dilakukan pada tepung termodifikasi adalah rendemen, kadar air, kadar amilosa, profil gelatinisasi, dan derajat putih. Analisis yang dilakukan pada mi singkong adalah waktu optimum pemasaka, elongasi, daya serap air, dan KPAP.
Modifikasi tepung singkong dengan cara fermentasi spontan, tepung gaplek, dan Heat Moisture Treatment (HMT) berpengaruh terhadap rendemen, kadar air, kadar amilosa, derajat putih, dan profil gelatinisasi pati. Modifikasi tepung gaplek dapat meningkatkan kadar air, kadar amilosa, derajat putih, viskositas (puncak, akhir, dan setback), dan suhu awal gelatinisasi namun menurunkan rendemen dan viskositas breakdown. Modifikasi tepung singkong fermentasi spontan dapat meningkatkan kadar amilosa dan suhu awal gelatinisasi, namun menurunkan rendemen, kadar air, dan viskositas breakdown. Modifikasi tepung singkong heat moisture treatment dapat meningkatkan suhu awal gelatinisasi dan menurunkan rendemen, kadar air, viskositas (puncak, breakdown, akhir, setback) serta derajat putih.
Tepung singkong termodifikasi dengan sifat fungsional terbaik dan kadar amilosa tertinggi yang dipilih adalah tepung gaplek. Formula optimum untuk pembuatan mi gaplek adalah jumlah tepung 71,5%, jumlah air 28,5%, suhu ekstrusi 82°C, dan kecepatan screw ekstruder 93 rpm. Karakteristik mi gaplek yang dihasilkan memiliki waktu optimum pemasakan selama 8,67 menit, elongasi 344,60%, daya serap air 90,80%, dan KPAP 17,84%. Formula optimum yang direkomendasikan oleh program DX11 dapat memprediksi semua nilai waktu optimum pemasakan, elongasi, daya serap air, dan KPAP. Noodles are one of the foods that are still dominated by wheat flour in the manufacturing process, meanwhile wheat as the main ingredient in the manufacture of wheat flour is still imported from abroad to Indonesia. Sources of local raw materials that have not been utilized in Indonesia Indonesia is cassava. Processing cassava into cassava flour is an alternative in making noodles. Natural cassava flour has a weakness in functional properties and low amylose content, so modification is needed.
This study aims to compare various modification techniques of cassava flour (spontaneous fermentation, gaplek flour, and Heat Moisture Treatment/HMT) on functional properties and amylose content of flour, choose one modified cassava flour methods that has the best functional properties and the highest amylose content, and obtain a combination of formula variables (amount of flour and amount of water) and the optimum process variables (extrusion temperature and screw extruder speed) in the manufacture of noodles made from modified cassava flour. This study consisted of 2 stages, namely the manufacture of cassava flour with several modifications and optimization of the formula and the process of making cassava noodles using the Response Surface Methodology (RSM) research design, namely the combined design. The manufacture of cassava noodles is carried out using a single-screw extruder. The analysis carried out on the modified flour was yield, moisture content, amylose content, pasting properties, and whiteness index. The analysis carried out on cassava noodles was the optimum cooking time, elongation, water absorption, and cooking loss.
Modification of cassava flour by spontaneous fermentation, gaplek flour, and Heat Moisture Treatment (HMT) affects the yield, moisture content, amylose content, whiteness index, and pasting properties. Modification of gaplek flour can increase moisture content, amylose content, whiteness index, viscosity (peak, final, and setback), and pasting temperature but decrease yield and breakdown viscosity. Modification of spontaneous fermentation can increase amylose content and pasting temperature, but decrease yield, moisture content, and breakdown viscosity. Modification of heat moisture treatment can increase the pasting temperature and decrease yield, moisture content, viscosity (peak, breakdown, final, setback) and whiteness index.
The modified cassava flour with the best functional properties and the highest amylose content selected was gaplek flour. The optimum formula for making gaplek noodles is the amount of flour 71,5%, the amount of water 28,5%, the extrusion temperature is 82°C, and the screw extruder speed is 93 rpm. The characteristics of the resulting cassava noodles have an optimum cooking time of 8,67 minutes, elongation 344,60%, water absorption capacity of 90.80%, and cooking loss 17.84%. The optimum formula recommended by the DX11 program can predict all values for optimum cooking time, elongation, water absorption, and cooking loss.
