      Abstract
      Penelitian bertujuan memformulasikan produk emulsi stabil yang kaya β-karoten dari fraksi olein minyak sawit merah. Penelitian terdiri dari beberapa tahap. Tahap satu bertujuan menentukan jenis emulsifier yang sesuai pada berbagai rasio minyak/air. Beberapa emulsifier yaitu CMC, Gelatin, Lesitin, Tween 80 dicoba pada rasio 2:8, 3:7, 4:6, 7:3, 8:2 dan 9:1 dengan metode emulsifikasi tertentu menggunakan alat ultra mixer.
