Studi Stabilitas Minyak Kapang Mucor inaequisporus M05 11/4 Kaya Asam Gamma Linolenat Selama Penyimpanan

Abstract

Analysis of Mucor inaequisporus MOS 1I14 oil stability that was kept at 60C, was done including the values of peroxide, thiobarbituric acid (TEA), total oxydation and the content of gamma linolenic acid. Determination of peroxyde value that was carried out using both the iodometric and ferrythiocyanic methods, resulted in a positive correlation with correlation factor of 0.9727.
