dc.description.abstract | Phytase (EC 3. 1. 3. 8) hydrolize phytate into mio-inositol and inorganic phosphorus (phosphoric acid). Phytase can be found in the grains and produced by microorganism. Phytase production is influenced by the type of fungi, substrate, pH, nutrients of media, moisture content, and incubation temperature. The aim of this research was to screen fungi that produce the highest phytase activity and determine the optimum conditions for production of phytase by fungi using media formulated media under solid state fermentation. Based on this research, Aspergillus niger str3 and Neurospora crassa were the phytase producing fungi. Cocunut cakes supplemented with rice brand at the ration of 1:1 w/w was the best substrate for growth of fungi, with the phytase activity of 60.030 U/mL for A. niger str3 and 45.844 U/mL for N.crassa with addition of 20 % tapioca at pH 6. | id |
