The purpose of this study was to identify the critical control points of tuna handling processes in the fishing port Nizam Zachman Jakarta with the HACCP (Hazard Analysis Critical Control Point). Research method used was a case study during the handling of tuna on board and in fishing port Nizam Zachman Jakarta. Data were collected through observation when handling fish tuna, interviews guided by a questionnaire and secondary data collection from the fishing port to support the primary data. The decision tree has been applied to analysis critical control point-CCP during process of tuna handling. Results of the study showed that the identification of critical control points in the process of handling fresh tuna with a decision tree was known that the gaffing and landing of fish to the board; killing; bleeding, gilling and gutting; onboard storage; unloading and storage in tuna landing center are critical control points- CCP
