dc.description.abstractPPI Karangsong is one of the ports that has in Indramayu. The catch which is put ashore on ppi karangsong very diverse and abundant. Many types of fishing gear used are gillnet millennium, with the catch of mackerel is an important commodity and has economic value. Operation of gillnet gear will take approximately 30 to 45 days. Long time required in making the arrest will affect the quality of fish. The purpose of this study was to observe the handling applied by fishermen aboard a gillnet in determining the quality of fish in the PPI Karangsong. The method which was used in this research is case study, with organoleptic observations, control p chart analysis, pareto diagrams and diagram of cause and effect. The results of observations conducted in PPI Karangsong, the average value of test organoleptic was range from 6 to 7. These values indicated that the fish is still good and worthy to be consumed. The process of handling mackerel fish on gillnet ship was still within the bounds of the control. This could be seen on diagram of the control chart, proportion of unfresh fish was still in the control limits. The criteria of unfresh fish which was discovered were broken and slimy gills (35,71%), Flesh of the abdomen that was somewhat pulpy (21,42%), and red eyes (16,67%).en
