dc.description.abstractBanana includes of five main food commodity in Indonesia besides wheat, cassava, sweet potato and corn so that banana need special treatment in order to get good quality, this experiment examined effect of KMnO4 with clay media conveyor to storage time for Mas bananas (Musa sp. AA GROUP). Experiment including storage time, index of color scale, mass reduction, hardness, fruit ratio, edible part, Total Disolved Solid, titratable acidity and Vitamin C. Monitoring of mass reduction and index of color scale did 3, 6 and 9 days after experiment, while hardness, fruit ratio, edible part, Total Disolved Solid, titratable acidity and Vitamin C did 6 and 12 days after experiment. Result shown KMnO4 has not effect to storage time, vitamin C and total of solid dissolved but it affected to index of color scale, mass reduction, hardness, fruit ratio and edible part. This experiment should be continue in order to get better result.en
