      Application of Kappa Carragenan from Kappaphycus alvarezii Seaweed as Edible Film on Peeled Boiled Shrimp

      Abstract
      produce carrageenan. Carrageenan is a linear polysaccharide polymer, has a lot of function in industrial used such as viscosifier and gelling agent. Using carrageenan as edible film can improve its economic value. The research was carried out to study: (1) the optimum of KOH concentration (0.5; 1 and 1.5% w/v) and extraction time (1; 2 and 3 hours) to produce carrageenan, (2) the effect of carrageenan concentration (0.5; 1; 1.5 and 2% w/v) on the characteristic of edible film and (3) the effect of application carrageenan on coating of boiling shrimp quality during chill storage. This research consist of three steps as follows, carrageenan extraction, making of edible film and application carrageenan solution on boiling shrimp coating. The research shows that yield and viscosity of carrageenan were influenced by interaction of KOH concentration and extraction time. The best treatment was extraction with 0.5% KOH solution for 1 hour. Using 1.5% carrageenan on making edible film exhibited better properties in compared to others. Carrageenan concentration demonstrated significant effect on tensile strength and elongation percentage, however exhibited insignificant effect on thickness and water vapor transmission rate. SEM analysis shows that addition of carrageenan could improve the internal structure of edible film. Application of carrageenan solution on boiling shrimp coating indicate that coating application could extend its shelf life until 9 days based on value of total microbes for frozen boiling shrimp (SNI 01-3458-2006), while uncoated product could extend only 3 days.
       
      Pengolahan karaginan merupakan salah satu alternatif untuk meningkatkan nilai jual rumput laut Indonesia. Pemanfaatan karaginan sebagai bahan baku edible film merupakan salah satu upaya untuk mendorong berkembangnya industri pengolahan karaginan di dalam negeri. Tujuan dari penelitian ini adalah untuk menentukan (1) konsentrasi KOH dan lama ekstraksi yang optimum dalam menghasilkan tepung kappa karaginan, (2) konsentrasi tepung kappa karaginan dalam menghasilkan edible film dengan karakteristik yang optimal dan (3) pengaruh penggunaan edible coating dalam mempertahankan mutu udang kupas rebus selama penyimpanan dingin. Penelitian ini terdiri dari tiga tahap, yaitu optimasi metode ekstraksi karaginan, pembuatan edible film dari karaginan dan aplikasi edible film karaginan untuk mempertahankan mutu udang kupas rebus. Penelitian tahap 1 menggunakan dua faktor, yaitu konsentrasi KOH (0,5; 1 dan 1,5% b/v) dan lama ekstraksi (1,2 dan 3 jam). Penelitian tahap 2 menggunakan empat konsentrasi karaginan, yaitu 0,5; 1; 1,5 dan 2% (b/v). Penelitian tahap terakhir menggunakan dua faktor, yaitu aplikasi edible coating (tanpa coating dan coating) dan lama penyimpanan (0, 3, 6, 9, 12, 15, 18 dan 21 hari). Hasil penelitian menunjukkan bahwa interaksi antara konsentrasi KOH dan lama ekstraksi berpengaruh nyata (p<0,05) terhadap rendemen dan viskositas karaginan yang dihasilkan. Metode ekstraksi terbaik adalah menggunakan KOH 0,5% selama 1 jam dengan karakteristik rendemen 45,64%, viskositas 18cP, kadar air 16,26%, kadar abu 35,90%, kadar abu tak larut asam 0,32%, kadar sulfat 5,04%, dan kekuatan gel 385,63 gel force.
