Abstract
Coconut oil contains glyceride, are compounds of glycerine with fatty acids. The amount of unsaturated fatty acid content in the oil greatly affects the stability of their chemical structure. Coconut oil contains karotenoida only slightly, making it easier to happen oxidation that can produce compounds called free radicals. This compound can donate the rancid. This study aims to test the chemical potential of essential oil of betel leaf in preventing rancid on coconut oil. Essential oil of betel leaf is obtained by distillation, then added coconut oil to obtain essential oil content of 2%, 3% and 5%, then performed the test peroxide numbers. Analysis of chemical content of essential oil of betel leaf done with Chomatography Gas -Mass Spectroscopy. Essential oil of betel leaf contains phenolic compounds, chavicol and acetyl eugenol which can function as an antioxidant. The isolated essential oil of betel leaf gained 3.8% yield of essential oil. After 30 days the value of peroxide number in coconut oil with high levels of 2%, 3% and 5% essential oils in a row shows 3.33 Meq/kg of materials, 3.39 Meq/kg of materials and 2.38 Meq/kg of material. Analysis of chemical constituents of essential oil of betel leaf with GC-MS showed that essential oil of betel leaf has antioxidant potential because there are compounds of phenol-2- methoxy-3-(2-propenyl), and Chavicol which serves as a reductant for oxidized compounds.
