dc.description.abstractPapain merupakan golongan enzim protease sulfhidril bahati yang berasal dari getah tanaman pepaya (Carica papaya Linn.), merupakan rantai polipeptida yang terdiri atas 212 asam amino dan mempunyai bobot molekul 23.300 Dalton. Aktivitas papain berada pada kaisaran pH antara 4,0-8,5 dengan pH optimum anatar 6,0-7,0.en
dc.description.abstractPapain is a natural proteolytic enzyme. It is composed of a single polypeptide chain of 212 amino acid and has a molecular weight of 23,900 Daltons, extracted from Carica papaya latex. Papain shows activity at a broad pH range (4.0-8.5) with an optimum between pH 6.0-7.0. The active aite inactivated by oxidation. The process is reversible and initial activity of the papain is permanently inactive if exposed to oxidation for a long period of time.en
