      Abstract
      Berdasarkan Data Susenas pada tahun 2021 sumber utama kalori penduduk Indonesia adalah dari kelompok padi-padian yang mencapai 39,57%, demikian juga sumber protein pada pola konsumsi protein penduduk Indonesia berasal dari kelompok padi-padian yang mencapai 32,07% presentase tersebut merupakan presentase terbesar dari total kelompok bahan makanan. sedangkan presentase konsumsi kalori penduduk Indonesia dari kelompok umbi-umbian hanya mencapai 2,16%. Hal ini menggambarkan bahwa pola konsumsi pangan pokok atau pangan sumber karbohidrat bahkan pangan sumber protein di Indonesia masih didominasi oleh kelompok padi-padian terutama beras dan terigu, sedangkan kontribusi dari kelompok bahan makanan umbi-umbian masih rendah. Penelitian kandungan gizi pada mi instan talas beneng telah dilakukan sebelumnya oleh Fitridewi (2023) namun pada penelitiannya kandungan protein pada mi instan talas beneng ini masih rendah, sehingga diperlukan pengembangan formula dengan penambahan isolat protein kedelai yang diharapkan dapat meningkatkan nilai gizi protein pada mi instan talas beneng tersebut sehingga dapat menjadi makanan yang tinggi kalori dan protein serta cukup zat gizi lainnya. Isolat protein kedelai merupakan konsentrat protein dari kacang kedelai yang memiliki sifat fungsional yang baik karena tinggi kandungan protein yaitu minimal 90% protein. Kedelai memiliki nilai indeks glikemik rendah sehingga dapat menurunkan risiko penyakit diabetes melitus. Penelitian ini merupakan bagian dari peneliatan payung mengenai pengembangan mi instan talas beneng. Nilai indeks glikemik (IG) yang dianalisis telah dilakukan uji secara terpisah pada penelitian Pratama et al (2026) dengan hasil indeks glikemik sebesar 43,6 yang tergolong rendah dengan beban glikemik sebesar 16,9. Respon glukosa pasca makan menunjukkan kontrol yang lebih baik daripada glukosa murni. Hal ini menunjukkan bahwa mi instan talas beneng dapat menjadi alternatif makanan sehat yang aman bagi penderita diabetes. Namun penelitian ini berfokus kepada evaluasi mutu protein, hubungan positif protein dengan diabetes dan umur simpan pada produk mi instan talas beneng. Pada penelitian sebelumnya oleh Fitridewi (2023) pengembangan produk mi instan talas beneng telah dilakukan pada skala laboratorium. Skala laboratorium merupakan dasar dari suatu proses produksi. Proses penggandaan skala atau scale up diperlukan untuk meningkatkan kapasitas produksi dan memenuhi kebutuhan konsumen. Sebelum memasuki skala industri, diperlukan peralihan dari skala laboratorium ke skala pilot. Penelitian ini menggunakan desain penelitian eksperimental dan jenis rancangan penelitian RAL (Rangkaian Acak Lengkap). Perlakuan dalam pembuatan mi instan talas beneng ini yaitu menggunakan tepung talas modifikasi (motaf) dan penambahan isolat protein yang akan ditambahkan sebanyak 10% (F1), 15% (F2) dan 20% (F3) dengan dua kali ulangan pada setiap perlakuan. Untuk menentukan produk terpilih dilakukan analisis fisik dan analisis warna. Setelah mendapatkan satu formula terpilih dilakukan analisis protein, profil asam amino, daya cerna protein, mutu protein, dan umur simpan. Produk dengan penggandaan skala pilot dengan produksinya ditambah lebih besar 5-10 kali lipat dari skala laboratorium. Selain itu dilakukuan juga perhitungan kontribusi produk mi instan talas beneng dengan menghitung kandungan gizi talas beneng lalu dibandingkan dengan acuan label gizi (ALG) dan Informasi Nilai Gizi (ING) serta klaim gizi. Pengolahan data dilakukan dengan menggunakan Ms. Excel dan analisis data dilakukan dengan menggunakan metode Analysis of Variance (ANOVA) dan T-test dengan tingkat kepercayaan 95% (a = 0,05) melalui aplikasi SPSS. Data direpresentasikan dalam bentuk nilai rerata ± standar deviasi. Formula yang terpilih yaitu formula dua (F2) dengan tekstur dan warna paling baik. Hasil dari penelitian yang dilakukan pada F2 menunjukkan hasil protein yang sudah memenuhi SNI yaitu sebesar 15,1% dan daya cerna yang baik mencapai 89%. Hasil mutu protein berdasarkan PDCAAS in vitro didapatkan protein mutu sedang dengan nilai 40,71%. Hasil penelitian umur simpan berdasarkan perhitungan Arrhenius dapat bertahan hingga 82 hari pada parameter aktifitas air (aw) dan 73,1 hari pada parameter kadar air, namun umur simpan masih dapat diperpanjang lagi dengan mengganti kemasan dengan yang lebih kedap udara dan memperpanjang waktu pengeringan sampai produk mencapai kadar aw sebesar 0,3. Mi instan talas beneng mengandung protein 15,1g/100g yang berpotensi mendapatkan klaim sumber protein, mengandung kadar lemak 1,9g/100g yang berarti mendapatkan klaim rendah lemak dan mengandung serat 12g/100g yang berpotensi mendapatkan klaim tinggi serat.
       
      Based on Susenas Data in 2021, the primary source of calories for the Indonesian population is from the grain group, which reaches 39.57%, as well as the source of protein in the protein consumption pattern of the Indonesian population comes from the grain group which reaches 32.07%, the percentage is the most significant percentage of the total food group. While the percentage of calorie consumption of the Indonesian population from the tuber group only reached 2.16%. This illustrates that the consumption pattern of staple foods or food sources of carbohydrates and protein in Indonesia is still dominated by the grain group, especially rice and wheat. In contrast, the contribution of the tuber food group is still low. Research on the nutritional content of beneng taro instant noodles has been carried out previously by Fitridewi (2023), but in his research the protein content of beneng taro instant noodles is still low, so it is necessary to develop a formula with the addition of soy protein isolate which is expected to increase the nutritional value of protein in the beneng taro instant noodles so that it can be a food that is high in calories and protein and enough other nutrients. Soy protein isolate is a protein concentrate from soybeans that has good functional properties because of its high protein content, which is at least 90% protein. Soybeans have a low glycemic index value, so they can lower the risk of diabetes mellitus. This study is part of an umbrella research project on the development of Beneng taro instant noodles. The analyzed glycemic index (GI) value has been tested separately in the study of Pratama et al (2026) with a glycemic index of 43.6 which is considered low with a glycemic load of 16.9. The post-meal glucose response showed better control than pure glucose. This indicates that Beneng taro instant noodles can be a safe and healthy food alternative for diabetics. However, this study focuses on evaluating protein quality, the positive relationship between protein and diabetes, and the shelf life of Beneng taro instant noodles. In previous research by Fitridewi (2023), the development of beneng taro instant noodle products has been carried out on a laboratory scale. Laboratory scale is the basis of a production process. The process of scaling up is needed to increase production capacity and meet consumer needs. Before entering the industrial scale, it is necessary to switch from the laboratory scale to the pilot scale. This study uses an experimental research design and uses the type of RAL (Complete Random Series) research design. The treatment carried out in the manufacture of instant taro beneng noodles is to use modified taro flour (motaf) and the addition of protein isolate, which will be added as much as 10% (F1), 15% (F2), and 20% (F3), with two repetitions in each treatment. Physical analysis and color analysis were carried out to determine the selected product. After obtaining one selected formula from the three treatments, protein analysis, amino acid profile, protein digestibility, protein quality, and shelf life were analyzed. Products with a pilot scale are doubling their production and are 5-10 times greater than the laboratory scale. In addition, the contribution of tamarind beneng instant noodle products was also calculated by calculating the nutritional content of taro beneng and then compared with the nutrition label reference (ALG) and Nutritional Value Information (ING), as well as nutritional claims. Data processing was carried out using MS Excel, and data analysis was carried out using the Analysis of Variance (ANOVA) and T-test methods with a confidence level of 95% (a = 0.05) through the SPSS application. The data is represented in the form of mean values ± standard deviations. The formula selected from the results of the analysis test of the three formulas is Formula two (F2) with the best texture and color. The results of the study conducted on F2 showed that the protein results that met the SNI were 15.1% and good digestibility reached 89%. The protein quality results based on PDCAAS in vitro obtained medium quality protein with a value of 40.71%. The results of the study show that the shelf life based on Arrhenius' calculations can last up to 82 days for the water activity parameter (aw) and 73 days for the water content parameter, but the shelf life can still be extended by replacing the packaging with a more airtight one and extending the drying time until the product reaches an aw level of 0.3. Instant taro beneng noodles contain 15.1 g/100g of protein, which has the potential to get a claim of protein source, contains a fat content of 1.9 g/100g, which means it gets a claim of low fat, and contains fiber of 12 g/100g, which has the potential to get a claim of high fiber.
