dc.description.abstractPentingnya produk whole chicken sebagai komoditas pangan menuntut Rumah Potong Ayam (RPA) untuk menerapkan quality control yang ketat demi menjaga standar mutu produk. Tujuan dari penelitian ini adalah mengevaluasi konsistensi manajemen suhu chilling dan menganalisis tingkat defect karkas pada dua shift kerja yang berbeda. Penelitian dilakukan secara observasional terhadap 500 sampel karkas dengan metode Rancangan Acak Lengkap (RAL) untuk data suhu dan Rancangan Acak Kelompok (RAK) untuk data defect. Variabel yang diamati meliputi suhu inti karkas pasca-chiller serta indikator defect fisik yaitu sisa bulu, memar (bruise), patah tulang, kulit sobek, dan warna karkas. Hasil penelitian menunjukkan bahwa rata-rata suhu karkas mencapai 3°C, yang memenuhi standar operasional perusahaan (<4°C) tanpa perbedaan nyata antar shift (p>0.05). Indikator patah tulang, kulit sobek, dan warna karkas menunjukkan angka kejadian nol (terkendali). Namun, terdapat perbedaan nyata (p<0.05) pada kejadian memar yang lebih tinggi pada shift 2. Analisis fishbone menunjukkan bahwa faktor manusia (shackling yang terlalu cepat dan kelelahan) serta faktor mesin (tekanan plucker yang terlalu keras) menjadi akar permasalahan defect memar.
dc.description.abstractThe importance of whole chicken as a food commodity requires Chicken Slaughterhouses (RPA) to implement strict Quality Control to maintain product quality standards. This study aimed to evaluate the consistency of chilling temperature management and analyze carcass defect levels across two different work shifts. The study was conducted observationally on 500 carcass samples using a Completely Randomized Design (CRD) for temperature data and a Randomized Block Design (RBD) for defect data. Variables observed included core carcass temperature post-chiller and physical defect indicators: feathers, bruising, broken bones, skin tears, and carcass color. The results showed that the average carcass temperature reached 3°C, meeting company standards (<4°C) with no significant difference between shifts (p>0.05). Broken bones, skin tears, and carcass color indicators showed zero incidence (controlled). However, there was a significant difference (p<0.05) in bruising, which was higher in Shift 2. Fishbone analysis indicated that human factors (too fast shackling and fatigue) and machine factors (excessive plucker pressure) were the root causes of bruising defects.
