      Total Fenolik, Flavonoid, Tanin dan Kapasitas Antioksidan Ekstrak Etanol Teh Hijau dan Teh Hitam

      Abstract
      Teh hijau dan teh hitam (Camellia sinensis) merupakan minuman yang kaya akan senyawa bioaktif, yang bertindak sebagai antioksidan. Penelitian ini bertujuan mengukur senyawa bioaktif seperti fenolik, flavonoid, dan tanin serta kapasitas antioksidan dari ekstrak etanol 70 %. Kandungan total fenolik dan tanin dilakukan dengan metode folin-ciocalteu, kadar flavonoid dilakukan dengan metode aluminium klorida serta kapasitas antioksidan ekstrak etanol teh hijau dan teh hitam menggunakan metode DPPH, FRAP, dan MDA/TBA. Hasil penelitian menunjukkan bahwa teh hijau memiliki kadar total fenolik (262,22 ± 4,08 mg GAE/g ekstrak), dan tanin (161,86 ± 2,76 mg TAE/g ekstrak), serta aktivitas antioksidan yang lebih tinggi dibandingkan teh hitam pada semua metode pengujian. Teh hitam hanya menunjukkan kadar total flavonoid yang lebih tinggi yaitu 19,54 ± 0,62 mg QE/g ekstrak. Kapasitas antioksidan tertinggi terdapat pada teh hijau dengan nilai DPPH sebesar 942,55 ± 13,73 µmol TE/g ekstrak, FRAP sebesar 2681,87 ± 122,22 µmol TE/g ekstrak, dan persen inhibisi MDA/TBA sebesar 84,63 ± 0,17 %. Hasil ini menunjukkan bahwa teh hijau memiliki potensi antioksidan yang lebih kuat dibandingkan teh hitam, sehingga efektif menetralisir radikal bebas dan menjaga keseimbangan homeostasis oksidatif tubuh
       
      Green tea and black tea (Camellia sinensis) are beverages rich in bioactive compounds which play a crucial role in antioxidant activity. This study aimed to determine the total phenolic, flavonoid, and tannin contents, as well as antioxidant capacity of 70% ethanol extracts from green tea and black tea using DPPH, FRAP, and MDA/TBA methods. The results showed that green tea had higher total phenolic content (262,22 ± 4,08 mg GAE/g extract), total tannin (161,86 ± 2,76 mg TAE/g extract), and antioxidant capacity in all tested methods compared to black tea. However, black tea showed a higher total flavonoid content at 19,54 ± 0,62 mg QE/g extract. Antioxidant capacities of green tea were recorded at 942,55 ± 13,73 µmol TE/g extract (DPPH), 2681,87 ± 122,22 µmol TE/g extract (FRAP), and 84,63 ± 0,17 % of MDA/TBA inhibition. These findings show that green tea has a stronger antioxidant potential than black tea, making it effective in neutralizing free radicals and maintaining oxidative homeostasis in the body.
