| dc.description.abstract | THUHROTUS SYARIFAH Efektivitas Ekstrak Cengkeh (Syzygium aromaticum) Terhadap Angka Lempeng Total dan Populasi Coliform Pada Susu Pasteurisasi. Dibimbing oleh PRIA SEMBADA
Susu pasteurisasi sangat rentan terhadap kerusakan mikrobiologis, sehingga memerlukan pengawet alami seperti ekstrak cengkeh (Syzygium aromaticum) yang mengandung euganol. Penelitian ini bertujuan untuk menganalisis efektivitas penambahan ekstrak cengkeh terhadap Angka Lempeng Total (ALT) dan populasi coliform pada susu pasteurisasi, serta menentukan presentase konsentrasi yang optimal. Penelitian menggunakan Rancangan Acak Lengkap (RAL), dengan 4 perlakuan : P0 (kontrol), P1 (0,5%), P2 (0,7%), P3 (1%). Parameter utama meliputi Angka Lempeng Total dan Bakteri Coliform, sementara parameter pendukung meliputi suhu dan pH. Hasil analisis statistik One-Way ANOVA menunjukkan bahwa ekstrak cengkeh berpengaruh signifikan terhadap populasi coliform (p<0,05), namun tidak berpengaruh signifikan pada Angka Lempeng Total (ALT) (p=0,893, p>0,05). Nilai pH yaitu (6,70-6,75) dan suhu (30,3°C),tetap stabil pada kondisi normal di seluruh perlakuan. Konsentrasi optimal diperoleh pada perlakuan P1 (0,5%) karena efisien dalam mempertahankan cemaran mikroba tetap rendah dan stabil setara kontrol.

| dc.description.abstract | THUHROTUS SYARIFAH. The Effectiveness of Clove (Syzygium aromaticum) Extract on Total Plate Count and Coliform Population in Pasteurized Milk.Supervised by PRIA SEMBADA
Pasteurized milk is highly vulnerable to microbiological spoilage, requiring natural preservatives such as clove extract (Syzygium aromaticum), which contains the antibacterial compund euganol. This study aimed to analyze the effectiveness of clove extract on Total Plate Count (TPC) and coliform populations in pasteurized milk, as well as to determine the optimal concentration. Completely Randomized Design (CRD) was used with four treatments: P0(0%), P1(0.5%), P2(0.7%), P3(1%). Primary parameters were TPC and Coliform, while supporting parameters included pH and temperature. One-Way ANOVA results indicated that clove extract significantly affected the coliform populations (p<0.05), but had no significant effect on TPC (p=0.893;p>0.05). the average pH (6.70-6.75) and temperature (30.3°C) remained stable within normal ranges across all treatments. The optimal concentration was P1 (0.5%), as it efficiently maintained low and stable microbial contamination comperable to thw control.
