      Abstract
      Industri ayam potong di Indonesia berkembang pesat seiring meningkatnya permintaan protein hewani, dengan broiler menjadi komoditas utama karena efisiensi produksi dan harga yang relatif terjangkau. Tingginya defect karkas ayam dapat menurunkan kualitas produk yang umumnya disebabkan oleh ketidaksesuaian proses, kondisi mesin, dan faktor operator. Pada departemen Slaughterhouse atau Rumah Potong Ayam (RPA) PT XYZ, pemotongan ayam dilakukan secara sistematis mulai dari penerimaan live bird, penyembelihan sesuai standar halal untuk menjaga kualitas daging.Tujuan penelitian ini adalah mengidentifikasi jenis defect pada hasil pemotongan ayam di departemen Evisceration Slaughterhouse PT XYZ sesuai standar perusahaan. Penelitian ini menggunakan pendekatan six sigma dengan metode DMAIC (define, measure, analyze, improve, control). Hasil dari penelitian ini didapatkan pada 10 hari awal terdapat 1.023 ekor yang termasuk ke dalam defect. Defect yang mendominasi adalah kaki patah dengan persentase kumulatif 32,4% dan over scalding 26%. Nilai DPMO yang didapatkan sebesar 16.153 yang artinya dalam 1 juta ayam potong terdapat 16.153 ekor cacat dan level sigma 3,64. Perusahaan disarankan untuk meningkatkan pengawasan terhadap parameter proses, terutama suhu scalding dan kecepatan mesin plucker, melalui monitoring dan kalibrasi secara berkala.
       
      The broiler chicken industry in Indonesia has experienced rapid growth due to the increasing demand for animal protein. Broiler chickens have become the primary commodity because of their production efficiency and relatively affordable price. This study aimed to identify the types of defects in chicken carcasses produced in the Evisceration Department of the Slaughterhouse at PT XYZ in accordance with the company's quality standards. This study employed the Six Sigma approach using the DMAIC (Define, Measure, Analyze, Improve, and Control) methodology. The results showed that during the first 10 days of observation, 1,023 chickens were classified as defective. The dominant defects were broken legs, accounting for 32.4% of the cumulative percentage, and over-scalding, accounting for 26%. The calculated Defects Per Million Opportunities (DPMO) value was 16,153, indicating that out of one million processed chickens, 16,153 were defective, with a sigma level of 3.64.
