| dc.description.abstract | Modified cassava flour (mocaf) merupakan tepung berbahan dasar singkong
yang diolah melalui proses fermentasi. Salah satu faktor yang dapat memengaruhi proses fermentasi adalah pH. Penelitian ini bertujuan menganalisis pengaruh larutan penyangga terhadap dinamika pH dan komunitas mikroba fermentasi serta kualitas tepung mocaf. Pembuatan tepung mocaf dirancang menggunakan rancangan acak kelompok lengkap (RAKL) satu faktor dengan 7 perlakuan. Parameter yang diamati pada penelitian ini, yaitu nilai pH, aroma, intensitas pembentukan gelembung gas, dan uji plate count komunitas mikroba pada cairan fermentasi serta nilai pH dan derajat putih tepung. Hasil penelitian menunjukkan bahwa perlakuan larutan penyangga natrium sitrat 0,1 M pH 4,0 dan 5,0 cenderung menyebabkan peningkatan pH cairan fermentasi, sedangkan perlakuan larutan penyangga kalium fosfat 0,1 M pH 6,0 menyebabkan penurunan pH cairan fermentasi secara lambat. Total bakteri asam laktat (BAL), total koliform cairan fermentasi, dan pH tepung dipengaruhi oleh pengaturan pH dengan larutan penyangga (p < 0,05). Di lain sisi, derajat putih tepung mocaf tidak dipengaruhi oleh pengaturan pH fermentasi. Secara umum, tepung mocaf seluruh perlakuan menunjukkan warna yang lebih putih dibandingkan tepung singkong, hal tersebut mengindikasikan bahwa proses fermentasi dapat meningkatkan profil warna

| dc.description.abstract | Modified cassava flour (mocaf) is cassava-based flour produced through
fermentation. The fermentation process can be influenced by pH. This study aims to analyze the effects of buffer on pH changes and microbial community of
fermentation liquid and quality of mocaf flour. Mocaf flour production in this study used a single-factor randomized complete block design with 7 treatments.
Parameters observed in this study were the pH value, aroma, intensity of gas bubble formation, and plate count test of the microbial community in the fermentation liquid, the pH value and whiteness index of the flour. Results showed that the 0.1 M sodium citrate buffer at pH 4.0 and 5.0 tended to increase the pH of the fermentation liquid, whereas the 0.1 M potassium phosphate buffer at pH 6.0 caused a gradual decrease in the pH of the fermentation liquid. pH adjustment with buffer also affected total lactic acid bacteria, total coliforms in the fermentation liquid, and the pH of mocaf flour (p < 0.05). In contrast, whiteness index of mocaf flour were not affected by the fermentation pH adjustment (p > 0.05). However, mocaf flour from all treatments exhibited a whiter color compared to cassava flour, indicating that the fermentation process can improve the flour’s color profile. | |
