dc.description.abstractDaun ulin (Eusideroxylon zwageri), bagian tanaman yang kaya akan metabolit sekunder, berpotensi sebagai antioksidan alami. Penelitian ini bertujuan mengevaluasi pengaruh fermentasi padat menggunakan Aspergillus oryzae terhadap aktivitas antioksidan ekstrak etanol 96% sebelas aksesi daun ulin koleksi Kebun Raya Bogor asal Kalimantan. Fermentasi dilakukan selama 14 hari pada suhu 28 °C, kemudian kapasitas antioksidan diuji menggunakan empat metode pengujian. Keragaman kapasitas antioksidan pada daun ulin diaksesi yang berbeda menunjukkan perolehan nilai tertinggi pada metode DPPH sebesar 434,147 mg TE/g ekstrak (IX.C.8), ABTS sebesar 229,390 mg TE/g ekstrak (IX.D.125a), FRAP sebesar 181,044 mg TE/g ekstrak (XVI.E.181), dan CUPRAC sebesar 159,570 mg TE/g ekstrak (IX.C.130). Pemetaan keragaman menggunakan analisis komponen utama (AKU) mengonfirmasi terjadinya perubahan pola klasterisasi setelah dilakukan perlakuan fermentasi. Analisis selanjutnya menggunakan Indeks Kapasitas Antioksidan Relatif (IKAR) berbasis Z-skor, yang menunjukkan peningkatan kapasitas antioksidan daun ulin sebesar 70% dari total aksesi daun.
dc.description.abstractUlin leaves (Eusideroxylon zwageri), a plant fraction rich in secondary metabolites, have the potential as a natural antioxidant. This study aimed to evaluate the effect of solid fermentation using Aspergillus oryzae on the antioxidant capacity of the 96% ethanol extract of eleven ironwood leaf accessions collected by Bogor Botanical Gardens from Kalimantan. Fermentation was conducted for 14 days at 28 °C, then the antioxidant capacity was assessed by four assay methods. The diversity of antioxidant capacity in different accessions of ironwood leaves showed the highest value obtained using the DPPH method of 434,147 mg TE/g extract (IX.C.8), ABTS of 229,390 mg TE/g extract (IX.D.125a), FRAP of 181,044 mg TE/g extract (XVI.E.181), and CUPRAC of 159,570 mg TE/g extract (IX.C.130). Diversity mapping using principal component analysis (PCA) confirmed changes in clustering patterns after fermentation treatment. Further analysis using the relative antioxidant capacity index (RACI) based on Z-scores, which showed an increase in the antioxidant capacity of ironwood leaves by 70% of the total leaf accessions.
