dc.description.abstractSenyawa fenolik dan flavonoid adalah senyawa metabolit sekunder yang ditemukan pada tanaman, seperti pada rimpang bangle dan memiliki kemampuan sebagai antioksidan yang dapat dimanfaatkan oleh tubuh untuk menangkal radikal bebas. Kadar senyawa fenolik dan flavonoid dapat ditingkatkan melalui proses fermentasi media padat. Penelitian ini bertujuan menentukan pengaruh optimasi kondisi fermentasi media padat bangle dengan L. plantarum. Hasil penelitian menunjukkan bahwa formula 9 dengan waktu inkubasi 9,1 hari, suhu 33 °C, kelembapan 60%, dan konsentrasi inokulum 7,7% menghasilkan kadar total fenolik tertinggi dengan nilai 50,33±2,97 mg GAE/g, sedangkan formula 23 dengan waktu inkubasi 14,0 hari, suhu 30 °C, kelembapan 50%, dan konsentrasi inokulum 10,0% menghasilkan kadar total flavonoid tertinggi dengan nilai 28,63±1,67 mg QE/g. Desain fermentasi rimpang bangle yang ditawarkan Design Expert untuk mendapatkan kadar fenolik dan flavonoid yang optimal adalah formula dengan waktu fermentasi 11,5 hari, suhu fermentasi 31 °C, kelembapan 60%, dan konsentrasi inokulum 10,0%.
dc.description.abstractPhenolics and flavonoids are secondary metabolite compounds that can be found in plants such as bangle rhizome and it has properties as antioxidant that can be used prevent free radicals on the body. Phenolic and flavonoid concentration can be increased by the result of fermentation. This research is done to determine the effect of optimization condition of bangle solid-state-fermentation using L. plantarum. The result of this research shows that the 9th formulation with 9.1 days fermentation time, 33 °C temperature, 60% humidity, and 7.7% inoculum concentration produce the highest total phenolic content with a value of 50.33±2.97 mg GAE/g, whereas the 23td formulation with 14.0 days fermentation time, 30 °? temperature, 50% humidity, and 10.0% inoculum concentration produce the highest total flavonoid content with a value of 28.63±1.67 mg QE/g. The optimal fermentation design that is offered by Design Expert for bangle rhizome to acquire the maximum yield of phenolic and flavonoid contents are 11.5 days for the fermentation time, 31 °C for the temperature, 60% for the humidity, and 10.0% for the inoculum concentration.
