      Peningkatan Nilai Tambah Lemak Sapi menjadi Tallow balm pada Peternakan Rian Puspita Jaya Jakarta Selatan

      Abstract
      Lemak sapi adalah produk dari industri peternakan sapi yang belum termanfaatkan dengan baik di peternakan Rian Puspita Jaya. Penelitian ini bertujuan untuk mengetahui nilai tambah yang diperoleh dari pengolahan lemak sapi menjadi tallow balm dan menganalisis kelayakan finansial pengolahan lemak sapi menjadi tallow balm. Metode dalam penelitian ini adalah dengan analisis Business Model Canvas (BMC) dan metode Hayami untuk menganalisis nilai tambah. Hasil analisis menunjukkan bahwa pengolahan lemak sapi menjadi tallow balm memiliki nilai tambah sebesar Rp229.457 per kilogram dengan rasio 59,7% yang diklasifikasikan berada pada kategori rasio tinggi. Artinya, terjadi peningkatan nilai tambah yang relatif tinggi pada pengolahan lemak sapi menjadi tallow balm. Analisis kelayakan finansial menggunakan perhitungan cashflow menunjukkan bahwa pengolahan lemak sapi menjadi tallow balm dikatakan layak karena nilai NPV sebesar Rp354.186.765,25, nilai IRR sebesar 66%, nilai Net B/C sebesar 2,95, nilai Gross B/C sebesar 1,18, nilai PP sebesar 2 tahun, 4 bulan, 20 hari, serta nilai sensitivitas pada penurunan penjualan sebesar 15,20% dan kenaikan harga input produksi sebesar 58,83%.
       
      Beef tallow is a by-product of the cattle farming industry that has not been optimally utilized at Rian Puspita Jaya Farm. This study aims to determine the added value obtained from processing beef tallow into tallow balm and to analyze the financial feasibility of this processing. The methods used in this research include the Business Model Canvas (BMC) analysis and the Hayami method for added value analysis. The results showed that the processing of beef fat into tallow balm generated an added value of Rp229.457/kg; with an added value ratio of 59,7%, classified as a high added value product. This indicates a relatively high improvement in the value of beef fat when processed into tallow balm. Financial feasibility analysis using cash flow calculations shows that the processing of beef tallow into tallow balm is financially feasible, as evidenced by a Net Present Value (NPV) of Rp354.186.765,25; Internal Rate of Return (IRR) of 66%; Net BenefitCost Ratio (Net B/C) of 2.95; Gross Benefit-Cost Ratio (Gross B/C) of 1.18; Payback Period (PP) of 2 years, 4 months, and 20 days, and sensitivity values of 15,20% for a decrease in sales and 58,83% for an increase in input production costs.
