      Pemanfaatan Bayam Jepang menjadi Cookies Bayam di Bina Rahayu Farm

      Abstract
      Bina Rahayu Farm merupakan kelompok tani di Kabupaten Bandung Barat yang membudidayakan bayam Jepang sebagai salah satu komoditas unggulan. Namun, sebagian hasil panennya tidak memenuhi standar kualitas pasar dan masuk dalam kategori reject. Penelitian ini bertujuan untuk mengkaji pemanfaatan bayam Jepang reject menjadi produk cookies bayam Jepang. Metode yang digunakan meliputi uji hedonik untuk mengetahui tingkat kesukaan konsumen, analisis nilai tambah menggunakan metode Hayami, serta analisis kelayakan usaha dari aspek non finansial dan finansial. Hasil uji hedonik produk cookies bayam Jepang dengan atribut rasa, tekstur, aroma, warna, dan kemasan menunjukkan bahwa produk cookies bayam Jepang memperoleh respon positif dari panelis. Nilai tambah yang diperoleh sebesar Rp442.061 kilogram cookies dengan rasio nilai tambah 79%, termasuk kategori tinggi. Usaha ini dinyatakan layak dijalankan berdasarkan hasil analisis finansial yang menunjukkan nilai NPV sebesar Rp161.008.518, Net B/C 3,58, Gross B/C 1,33, IRR 52%, dan payback period selama 2,86 tahun.
       
      Bina Rahayu Farm is a farmer group in West Bandung Regency that cultivates Japanese spinach as one of the leading commodities. However, some of the harvest does not meet market quality standards and is categorized as reject. This study aims to examine the utilization of reject Japanese spinach into Japanese spinach cookies. The methods used include hedonic testing to determine the level of consumer preference, added value analysis using the Hayami method, and business feasibility analysis from non financial and financial aspects. The results of the hedonic test of Japanese spinach cookies products with attributes of taste, texture, aroma, color, and packaging showed that Japanese spinach cookies products received a positive response from panelists. The added value obtained was IDR 442.061 kilogram of cookies with a value added ratio of 79%, including the high category. This business was declared feasible based on the results of the financial analysis which showed an NPV value of IDR 161.008.518, Net B/C 3,58 Gross B/C 1,33, IRR 52%, and a payback period of 2,86 years.
