Pengembangan Minuman Sari Nanas Madu dengan Popping Boba Rumput Laut Merah (Eucheuma cottonii) dan Naga Merah

Abstract

Satu dari tiga orang di dunia mengalami kelebihan berat badan atau obesitas akibat asupan kalori berlebih. Meningkatkan asupan makanan tinggi serat bisa menjadi salah satu solusi untuk memperpanjang rasa kenyang, mencegah seseorang untuk mengonsumsi makanan lebih sering. Boba yang terbuat dari rumput laut merah telah dikembangkan dalam penelitian ini. Penelitian ini menjelaskan cara pengolahan boba rumput laut merah serta profil fisik dan kimianya, yaitu warna, viskositas, kandungan total fenol, profil gizi, antioksidan, estimasi umur simpan, dan kandungan mikroba. Penelitian ini dilakukan dengan rancangan acak lengkap dengan formulasi faktor tunggal rumput laut (RL) dan naga merah (NM). Perlakuan pada penelitian ini adalah rumus RL:NM dalam persen adalah 100:0 (F1), 80:20 (F2), 75:25 (F3), 70:30 (F4). Warna boba adalah merah dan kuning, dengan kekentalan tinggi. Hasil penelitian menunjukkan bahwa formula F3 mempunyai total serat pangan basis kering sebesar 21,98% dengan sifat organoleptik yang dapat diterima berdasarkan uji rangking (0,54) dan uji hedonik (6,88 dari 9), serta aktivitas antioksidan kuat ( 88,97 ppm). Kandungan fenolik totalnya adalah 79,82 mg GAE/g. Kandungan serat formula terpilih tinggi, menyumbang 36% dari rata-rata kebutuhan serat pria dan wanita usia 16-64 tahun. Jumlah mikroba tidak melebihi ketentuan, 1x103 koloni/ml; hasil pengujian Salmonella sp dan Escherichia coli memperoleh nilai negatif dan mempunyai umur simpan yang pendek diperkirakan 26 jam. Minuman tersebut dapat diterima dan dikembangkan menjadi minuman alternatif yang berpotensi menjadi sumber serat dan antioksidan.

One in three people in the world is overweight or obese due to over-calorie intake. Increasing the intake of high-fiber food could be one solution to prolong fullness, preventing one from taking more frequent food. A boba made from red seaweed has been developed in this study. This research elucidated the processing method of Red Seaweed Boba and its physical and chemical profile, i.e. colour, viscosity, total phenol content, nutrient profiling, antioxidants, shelf life estimation, and microbial content. This study was conducted in a completely randomized design with a single factor, seaweed (RL) and red dragon (NM) formulation. The treatment in this study was the RL: NM formula in percent was 100:0 (F1), 80:20 (F2), 75:25 (F3), 70:30 (F4). The colours of boba are red and yellow, with high viscosity. The results showed that the F3 formula had a total of 21,98% dry basis dietary fiber with acceptable organoleptic properties based on the ranking test (0,54), hedonic test (6,88 out of 9), and strong antioxidant activity (88.97 ppm). The total phenolic content is 79.82 mg GAE/g. The fiber content is high, contributing 36% of the average fiber requirement for men and women aged 16-64. The number of microbes does not exceed the provisions, 1x103 colonies/ml; the test results for Salmonella sp and Escherichia coli obtained negative values and have a short shelf life estimated at 26 hours. The beverage could be accepted and developed into an alternative drink that has the potential to be a source of fiber and antioxidants.
