dc.description.abstractPleurotus ostreatus diduga menghasilkan miselium udara tebal sehingga jamur ini dipilih sebagai model penelitian. Kondisi produksi miselium udara P. ostreatus belum diketahui, oleh sebab itu penelitian ini bertujuan mempelajari pengaruh cahaya dan ketersediaan karbon dioksida (CO2) terhadap pertumbuhan miselium udara P. ostreatus IPBCC231541. Miselium ditumbuhkan dalam cawan berisi Agar-agar Barley (AB), Agar-agar Sorgum (AS), serta Agar-agar Kentang Sukrosa (AKS). Kultur diinkubasi dalam dua kondisi, yaitu gelap dan normal. Kondisi terbaik berupa kondisi gelap dipilih untuk mempelajari pengaruh CO2 terhadap pertumbuhan miselium udara. Pertumbuhan koloni diamati setiap hari dan pertumbuhan miselium udara diamati pada akhir masa inkubasi. Hasilnya menunjukkan bahwa pertumbuhan miselium udara tidak dapat ditentukan pada kondisi gelap maupun perlakuan CO2. Koloni pada media AB dan AS pada kondisi gelap dan dengan penambahan CO2 tumbuh lebih baik dibandingkan pada AKS. Massa miselium pada AS tanpa penambahan CO2 menghasilkan bobot basah paling besar (0,78 g), namun karakteristik miselium pada AS dengan penambahan CO2 lebih cocok untuk daging analog, yaitu massa miselium tidak beraroma menyengat, elastis dengan tingkat kekeringan cukup, dan memiliki perlekatan ke substrat yang rendah.id
dc.description.abstractPleurotus ostreatus may produce thick aerial mycelium, so it was selected as the research model. However, conditions needed for aerial mycelium production were still being determined. Therefore, this research aimed to study the effect of light and the availability of CO2 on the aerial mycelium growth of P. ostreatus IPBCC231541. The mycelia were grown on Barley Agar (AB), Sorghum Agar (AS), and Potato Sucrose Agar (AKS). The cultures were incubated either under continuous dark or natural conditions. The best condition (continuous dark condition) was selected to study the effect of CO2 on its aerial mycelial growth. Observations were made daily on colony growth and at the end of the incubation period for aerial mycelium formation. The result indicated that aerial mycelium growth could not be determined in both continuous dark condition and CO2 addition. The colony on AB and AS under continuous dark and under CO2 addition grew better than on AKS. Mycelial mass on AS without CO2 addition was the heaviest (wet weight 0,78 g), but the characteristic of mycelial tissue produced under CO2 addition was more suitable for meat analog. It had a less aromatic, elastic, moderately dry, and easily separated from the substrate.id
