      Karakterisasi Morfologi dan Fitokimia Buah Lobi-lobi (Flacourtia inermis) pada Berbagai Tingkat Kematangan

      Abstract
      Lobi-lobi fruits (Flacourtia inermis) is Indonesian local fruits which are now rarely cultivated by the community. But lobi-lobi fruits contain beneficial nutrients such as phenolic and high anthocyanin, thus providing health benefits for the human body, one of them being an antioxidant. This study aims to determine morphological and phytochemical characteristic of lobi-lobi fruits at various stages of maturity based on changes in skin color. This study uses a sample of lobi-lobi fruits at 6 different stage of maturity based on fruit skin color. The observations made were morphological characterization was in the form of fruit diameter, total fruit weight, seed weight, aril weight, edible portion, and fruit hardness, also phytochemical characterization in the form of total dissolved solids (TDS), total titrated acid (TTA), sugar content (glucose, fructose, and sucrose) by enzymatic methods and secondary metabolites by GC-MS method. The results showed that lobi-lobi fruits have a high TTA content at each stage of maturity so that lobi-lobi fruits are a fruit that has a sour taste. The glucose content of lobi-lobi fruits has the highest proportion compared to fructose and sucrose. GC-MS testing showed that there were 34 total compounds at 6 stage of maturity of lobi-lobi fruits. Specific content was identified at maturity stage 1, 4, 5, and 6. Dominant organic acid in lobi-lobi fruits was identified from the GC-MS test conducted is malic acid.
