Abstract: Two hundreds species of microorganism which can produce polysaccharides had been reported. Most polysaccharide producing microorganism are: Xanthomonnas campestris (xanthan), Aerobacter spp, Streptococcus sp, Leuconostoc mesentroides(dextran), Sclerotium glucanicum (Scleroglu-can), Aureobasidium pullulan(pullulan), Alcaligenes faccalisvar myxogenes (curdlan), Pseudomonas clodea (gellan) Streptomyces zooepidemicus (hyaluronicacid). The ability of these polysaccharides to alter the sheological properties of water, by causing gel formation and altering the flow characteristics of aqueous solutions, has resulted in their application in wide variety of industri. alsituations . They are used extensively in the food, pharmaceutical, cosmetic, oil , paper, and textile industlies.
