dc.description.abstractAfrican catfi sh (Clarias gariepinus) has high protein content, therefore it is potential to be utilized for protein hydrolysate. Th e aims of research were to determine the optimum condition of hydrolysis process and to characterize protein hydrolysate obtained from african catfi sh. Catfi sh protein were enzimatically hydrolyzed by papain. Th e optimum concentration of papain was 5% (w/v) for 5 hours hydrolysis time. Degree of hydrolysis of protein hydrolisate was 47.24% with yield of 12.16% and water content of (3.45±2.05)%; ash content of (2.47±0.67)%; protein content of 69.26%; and fat content of 0.50%. African catfi sh protein hydrolyzate had a solubility value of 98.86%; the foam stability of 6.4%; capacity and stability emulsion of 65.90% and 43.18%; water absorpstion of 3.8±0.71 mL/g; fat absorption of 6.5±0.28 mL/g; and the color (brightness) with a value of L at (50.51±0.01).id
