dc.description.abstractTh is research aimed to determine the nutirent content, composition of fatty acid and the infl uence of proportion of chicken eggs and sea urchin gonads to the quality of bluder cake. Th e results of research showed that gonad of fresh sea urchin Echinothrix calamaris contained water 69.47%, ash 0.75%, fat 9.02%, protein 18.46%, carbohydrate 2.30% (by diff erence), and energy 164.22 kkal, saturated fatty acid (myristic 11.89%, palmitic 25.63%, and stearic 3.83%) and unsaturated fatty acid (palmitoleic 6.63%, oleic 7.87%, linolelaidic 2.63%, linolenic 6.35%, and arachidonic 10.38%). Th e proportion of eggs and gonads of sea urchin aff ected the quality of bluder cake. Th e bluder cake contained water from 21.70% to 27.17%, protein 4.59% to 5.02%, fat 17.68% to 29.30%, ash 0.67% to 0.91%, carbohydrate 38.61% to 50.62%, and energy 376.48 kkal to 437.9 kkal. All formulas were acceptable with the best proportion of chicken egg and gonad of sea urhin was 2:1.id
