dc.description.abstractRazor clam (Solen sp.) is one of nutritious aquatic products but in Indonesia, the information is still limited. Th e purposes of this research were to determine the chemical composition, fatty acid, cholesterol, minerals and heavy metals of razor clam. Razor clam was obtained from Kejawanan beach, Cirebon, West Java. Proximate analysis of fl esh and viscera showed that razor clam contained water content 78.59% and 75.49%, ash 1.53% and 2.56%, protein 14.48% and 15.21%, fat 1.72% and 1.95%, and carbohydrat (by diff erence) 3.68% and 4.79%, respectively. Fatty acid content of razor clam consisted of saturated fatty acid with highest content wasp almitic and stearic. Th e highest monounsaturated fatty acid was palmitoleic and oleic and the highest polyunsaturated fatty acid was EPA and DHA. Cholesterol of fl esh was 36,16 mg/100 g, while viscera’s cholesterol was 139,43 mg/100 g. Macrominerals of razor clams were sodium as the highest, followed by potassium, phosphor, magnesium and calcium. In addition, microminerals found to be iron (the highest) and zinc. Th e result of heavy metals analysis showed razor clam was under in maximum permitted level.id
