dc.description.abstractBamboo shootsis a part plant that useful as nutraceuticals or commonly called as functional foods, and also beneficial for health. The purpose of this research is to identify the best type of bamboo shoots and review stimulus benefits of bamboo shootand identified bamboo conservation actions by the community Kampung Pasir Peundeuy. This research was done at Organoleptic Test Laboratory IPB, Center for Agro Industry (BBIA), and Kampung Pasir Peundeuy Bogor from June-August 2013. The data was collected by Organoleptic test and cyanide test to determine the type of bamboo shoots superior, field observation and interviewing by snowball method. Based on the research, the bamboo shoots of bamboo gombong the best type with color parameters of 5.49, 4.71 for scent, 5.60 for texture and 4.20 for flavor. Bamboo gombong has the lowest levels of cyanide at 53 mg/kg. The usefulness type of bamboo shoot which is done by village public are 80% for food and 20% for medicine. Conservation of bamboo is still less, because 30 % of respondents who ever did the cultivation of bamboo.en
