dc.description.abstractAsam fitat mengandung mineral P yang tinggi (28,2%) dan potensial sebagai pengikat (chelating) mineral bervalensi-2. Ikatan tersebut menyebabkan tidak tersedianya mineral-mineral tersebut untuk penyerapan di dalam usus halus ternak monogastrik maupun manusia. Zn merupakan mineral yang ketersediaannya paling dipengaruhi oleh fitat.id
dc.description.abstractPhytic acid molecule has a high Phosphorus (P) content (28.2%) and chelating potential to form a wide variety of insoluble salts with divalent cations. These binding potentially renders these minerals unavailability for intestinal absorption of the monogastric animals as well as human. Zinc (Zn) may be the trace element which bioavailability is most influenced by phytate.en
