Kualitas Susu Segar sebagai Bahan Baku Keju Ditinjau dari Jumlah Sel Somatis, Kadar Lemak, dan Kadar Protein
Abstract
The aim of this study was to observed quality of fresh milk reviewed by somatic cells count, fat and protein levels. This research was conducted in February 2011 to July 2012. There were 35 bulk milk were taken from six farms. Data were analyzed descriptively and using linear correlation. The highest number of somatic cell, fat, and protein 2 780 000.00 ± 1 146 423.01 cell/ml, 4.05 ± 0.34%, and 3.66 ± 0.28% respectively. The result showed that positive correlation between bulk milk somatic cells count with fat and protein levels from dairy farmers which suppliers of cheese industry.
